First, I'm gonna post the recipe I found for Sugar Free Marshmallows:

Healthy Homemade Sugar Free Marshmallows

Makes 3 to 6 dozen marshmallows - depending on how large you make them

This recipe is based on one found in an older version of "The Joy of Cooking."

Most marshmallow recipes call for cooling the mixture in a cake pan then cutting

into cubes. These marshmallows are piped into wonderful cloud-shaped puffs.

Modified from The Seattle Times 11/5/05 Pacific Northwest insert.

Ingredients:

2 tablespoons Kosher powdered gelatin

1/2 cup cold water

1 1/2 cup of xylitol

1/2 cup ho****er

1/2 cup light agave nectar

2 teaspoons vanilla extract

1 cup of powered xylitol (food processor is great for this)

3 tablespoons arrowroot powder

1. In the first bowl of an upright mixer, sprinkle the gelatin over the cold water and let the mixture stand for at least 5 minutes.

The gelatin will soften but it will not dissolve at this point.

2. Stir the xylitol and ho****er with the agave nectar in a large saucepan over high heat until the xylitol has dissolved and the

mixture is boiling. When this syrup reaches 240-245 degrees on a candy thermometer, or as soon as a drop into a cup of cold water

forms a soft ball, it's ready.

3. With a whisk attachement on your mixer, blend the gelatin and cold water mixture as you stream in the boiling syrup.  The hot

syrup will dissolve the gelatin. Continue to beat until the mixture is whipped into puffy white meringue-like froth that holds stiff peaks.

This can take as long as a half an hour as it cools.  Slowly add the vanilla during the process.

4. While the marshmallows are whipping in the mixer, whisk together the powdered sugar and arrowroot powder and sift the mixture

over the surface of a baking sheet.  I use parchment paper on the baking sheets to reuse the sugar, and for easy clean-up.

5. Pile the fluff mixture into a gallon-size zipper-top bag, snip one corner off the end of the bag and pipe the fluff through it onto the

xylitol lined baking sheet. Make them as big or as small as you want.  Sprinkle the remaining xylitol mixture over the finished candies.

6. Let cool - they will firm up as they cool, and can be stored in a plastic container or popped into hot chocolate or on somemores - enjoy!

You can also use this marshmallow in recipes for marshmallow rice crispies (before it cools) and also pipe into chocolate cupcakes (before it cools) for

homemade cream filled cupcakes. PS: Xylitol seems to be available at the health food store. I bought some so we'll give this recipe a try this weekend hopefully...

What I ate today...What a day!  Breakfast: Oatmeal, TVP and soy milk, coffee (2 cups) Snack: 1 slice of roasted turkey meat and 1 cheese stick Snack: 1 medium orange Lunch: 1 5 oz can of chicken meat on a bed of 1 cup shredded lettuce and some pomegranet dressing Snack: 1 medium orange, 1 medium apple Snack: 12 oz V-8 juice and 1/3 cup of chocolate covered coffee beans (needed the rush.) Dinner: 5 oz of pork chop, grilled, 1/4 cup instant mashed potatoes prepared, 1/2 a can pickled beets..yum Dessert: SF Malted Milk Balls. I have no idea what nutritional value is on them...I'll try and look it up.  Totals for the day: Calories: 1648 (YIKES>..Way too low) Fat: 40 Carbs: 212 (Yikes...Way too high) Protein: 117 (just right...I feel like goldilocks...LOL) SO? How did you fare today?

Dawn you had a ccccccarb day LOL I don't know where you put it? I drank so much water today I had a hard time eating.  Since I have been maintaing same weight last two weights I am dropping some calories. I see to do better at 900.

Your numbers look really good. Low fat, fair protein. I mean with calories the protein looks great. How can we get lower calories with higher protein than this? I think it's impossible.  Good going!

Yes, I was suppose to weigh 125 according to the surgeon and that was at 11 months out..I was 122 then. I dropped some more and got eventually down to 116. It turns out that my attitude changes when the number on the scale goes up as opposed to going down...Happy vs Sad/Angry. You know, that old fat woman attitude..But now that I'm so small, it's dangerous. No one but people here would understand that but it's something I'm working on. I pledged to gain just 5 pounds and see if I can maintain it. 5 pounds is really hard. I've increased calories up to 2200-2300 a day to see if I can raise that number on the scale and it's tweeking just alittle up each day..Then I have a day like yesterday where I was too busy to eat and ... 1600. I did add a microwave muffin to the list but it still only has me up to 1800. Still alittle short.  Thanks for noticiing.

Was busy busy today(saturday) in the yard...The weather was so nice I was out side all day working. I am soooo sore.  But my flower beds are all turned over...My doc would have had a cow if she saw me working like that...Too bad! I'm tired of doing nothing...I feel Great...Lost a lb from am to pm!  Too crazy!  It's the lowest I weighed in a year! (Still working on Saturdays meal)  This is fridays B: 1/2 C Coffee, 1/2 Soy milk and 2oz protein powder ~1/2tsp coconut oil and Centrum chewable Vitamins L: 17 LF turkey pepperoni slices with LF mozzerlla cheese stick and 1/2 C blueberries S: 1/2 Serving chocolate espresso beans ...gawd they are good! (didn't even touch the soy ones yet) D:5 oz Baked chicken breast with tomatoes and five cheese with a wine and oil marinade     1/2 Spinach...1/4 C Cous- Cous S: 1/2 C FIber One Cereal dry S: 3oz Chicken (same as dinner) Fat 40   Carbs 89.5   Protein 122.5    Fiber 24    Calories: 1168

Missed posting yesterday,,I was gone. But here I am with Fridays food.. Calories  1200 Fat   41 Carbs   90 Protein 110 And Ive lost 4.4 lbs in two weeks, so Im not gonna complain!! have a great one! Betsy

No values on my day but her it is... B) EAS drink S) 4 M&M's L) 1/2 chicken breast, 1/4 cup corn, 1/4 cup peas, roll with butter D) Chicken breast, potato salad, beans, 2 tablespoons cake S) 60 cal yogurt Edited to add: I also had about 2 tablespoons gravy, and and 1/2 cup popcorn I forgot to add, on fitday I'm at about 1,300 calories, 45 gr fat, 91 carbs, and 65 protein. I will probably eat cottage cheese with a tablespoon of jam for another 11 gm protein, and some carbs. Still under 1,500 calories. So I'm good.
