IMNSHO: CALORIES. Let me say it again just to be clear.....CALORIES.
Always remember: "Calories consumed in excess of calories burned will result in a weight gain."
The thing is that not all calories result in the same satiety. Take a look at 100 calories of Doritos versus 100 calories of carrots. I'd bet that's almost more carrots than you could eat in one sitting.
The trick is to figure out how many calories keeps your weight stable and then find foods that you like (and keeps you satisfied) while keeping your calorie consumtion at the proper level.
For me, I watch Calories #1 and Protein grams per day #2.
