Cheesecake Thought I would share this recipe with everyone. Hope you enjoy!

This recipe makes 8 servings. Each serving has 0 fat, 0 sugar, 64 calories, 4 carbs, and 11 g of protein. 1 envelope of knox gelatine 1 cup cold water 2 packages (8 oz each) fat free cream cheese, softened 1 cup equal (or 3/4, to suit your taste) 2 teaspoons vanilla a squeeze of lemon juice in a small saucepan, sprinkle gelatine over 1/4 cup cold water, let stand 1 minute. Stir over low heat until gelatine is completely dissolved in a large bowl, with electric mixer, beat cream cheese, equal, vanilla, and lemon juice until blended. gradually beat in gelatine misture and remaining 3/4 cup water until smooth. pour into a 9 inch pie pan, cover, and chill for 24 hrs. I have a sister that lives near Springdale-She's a nurse. I was out there in June We always visit the Wal-Marts and we go to Eureka Springs for a day. Nice place to visit. Jan Terry
