I spent yesterday & today cooking! I made grilled chicken breast, roast pork, and I have a cabbage casserole in my slow cooker. Figured I'd get back to cooking & portioning everything out and this way there's NO excuse to buy lunch or dinner and end up with crap!

On the menu today:

B: 100g Greek Yogurt & 1 Large Egg
S: Tea
L: Salad - 1c greens w/ 75g grilled chicken
S: Cheese String & Pomegranate
D: Cabbage Casserole (1 cup serving)

Very easy recipe:

1lb ground chicken
Medium head of cabbage, chopped
1 onion, finely chopped
2 cans Campbells Tomato Soup
1 cup water
Salt & Pepper to taste

1. Brown the chicken in a skillet, drain
2. Add all ingredients in the crockpot
3. Cook on high 4-6 hours or low 8-10 hours

Tracey posted a similar recipe in the Ontario Recipes forum.

Simone - I used to use the cabbage but found it to be such a mess to chop...
so now I'm a lazy gal and I buy the prepackage shredded cabbage :) LOL

I LOVE LOVE LOVE cabbage casserole and make the same thing :)
I tend to use low sodium tomato soup when I make it for John.

I was tempted to buy the pre-shredded cabbage but it looked too fine. I worried that it would cook down to nothing.

I buy the reduced sodium soup too. After surgery everything tastes salty.

I could understand that since you do yours in the crock pot. I just do mine in the oven for
45 minutes or so.  I tend to use extra soup as I love it soupy. Gross I know!  Enjoy!
I think I'll take some chicken out and make it tomorrow. LOL

Not much of an appetite today.  Cooking up some meals as I will be away for a week and don't want the poor boy to starve.

B - chicken cacciotore, just one thigh and nothing else

L - maybe turkey veggie soup if I even eat anything

D - fresh fish, green salad

As of right now don't feel like any snacks but if hunger finds its way to me, I may throw in some hot salami and old cheddar, orange, protein shake, combination of them.
