Any healthy options for Easter Dinner?

Hello! 

Easter is right around the corner and in my southern family, we have always made lots of delicious food for the holidays. I had surgery on Feb 25 and am almost 2 months out and introducing lots of new foods to my diet. My nutritionist gave me the green light to start experimenting and so far the only real issues that I have had are with ground beef. 

This is the first holiday (of many) that I am going to be cooking healthy dishes for my family and I was wondering if anyone had any good recipes that they like for the holidays. I have to admit, not having stuffing or mac and cheese or broccoli/ cheese /rice casserole is going to be tough. 

I know that food is fuel now and that the reason that I had this surgery is to be healthy, but holidays are tough and I would love to still have some yummy foods with my family so any suggestions are welcome!

I make a pork tenderloin and I put apricot and peach preserves on it and roast it till the thermometer pops up.I am also going to make a some type of roasted veggies.I may make a broccili salad.If anyone wants dessert they can go to the ice cream place about a mile up the road.The preserves are sugar-free that I use.I sometimes put red pepper flakes on it also.

YUM! That sounds great! I haven't tried pork yet but before surgery, I loved pork tenderloin. I wonder how that would digest for me being 2 months at that point? Ground turkey, turkey sausage, turkey bacon, and chicken all work well for me….. that sounds delicious though!

I put it in the crockpot  on low with some potatoes for my husband and kids.I spend the extra money on the small bags so they won't eat too much of them. The crock pot is a great thing.

My first few holidays I just stuck to protein. Have some ham, or whatever is being served, and call it quits. Most of what people think of as holiday foods are mostly carbs and high calories. Many of those thibgs can get stuck going down, and you don't want that to happen at a holiday dinner.

6'3" tall, male.

Highest weight was 475. RNY on 08/21/12. Current weight: 198.

Thank you! I think protein is a good way to go also. I love ham so perhaps I will try that.

Having my parents there I don't want to get sick they still don't know I had the surgery.I will one day tell them.
