You can basically make your favorite potato salad and substitute bite size cauliflower for potatoes. Here's the way I do it:

1 head cauliflower broken into bite size pieces. Steam for about 10 minutes and cool.

Add 3/4 c. Mayo

1T mustard

1 t salt, and pepper as you like it

3 h.b. Eggs chopped

chopped green onions

1/4 c chopped dill pickle

3 slices chopped bacon

I've made it with and without bacon. It's yummy either way.

that's how I make my faux potato salad also, I also do the cauliflower and make my macaroni salad with it, my family loves it and we have few carbs that way!

I've seen this made with sour cream or plain yogurt also.

When I make any mayo type salad I mix 1/2 cup of greek yogurt with 1/4 cup low fat mayo, the mayo seems to make it much creamier

Yum!  I am trying this!

 Height: 5'7".  HW: 299, Program starting weight: 290, SW: 238, CW 138 - 12 pounds under goal!

Good Morning! Wow it's hard to believe the month of June has come and is almost gone. I like you don't have many plans yet for the weekend so I can relate to that good feeling. I am thinking of seeing if Em can go hang out with my sister tomorrow night and take my hubby to the casino to start his birthday month off right. Yeah-I said birthday month. The last few years we haven't done much to celebrate his birthday so I have been thinking of doing some surprise things during the month.

QOTD: Normally I like to bring a fruit platter and some kind of dessert (usually cookies) nothing fancy. If you travel 3,000 miles here I will plan a BBQ for you :)

Time since surgery: 22 months

B: SF latte, egg beaters with shredded cheese, 1 slice of bacon

L: Bananas and cream protein shake with powdered PB2 with chocolate

S: SF latte, Toasted coconut vanilla cheesecake L&F Greek yogurt, pork rinds and turkey jerky sticks

D: Sweet and spicy tuna packet, baby carrots with cilantro avocado dressing, a boiled egg and SF Jello

E: 6 miles done this morning and elliptical at lunch

V/W: On track

Totals: Cals:1162 Protein:141 Carbs:62 Fat:35
