I found this recipe that I thought was very interesting, and one I am going to make after my surgery for when I am able to eat food again.  It is low in fat and carbs but high in protein.  I thought I would share it for those of you who are at that stage now and looking for something different.

Chicken Muffins

Ingredients

    12 ounce cooked and diced chicken (2 cups)
    2 eggs
    1/4 cup celery, minced (1 small stalk)
    1 teaspoon dry minced onion
    1/4 teaspoon pepper
    1/2 teaspoon chicken seasoning (or use 1/4 teaspoon poultry seasoning and 1/4 teaspoon salt)
    2 tablespoons pimiento, minced (optional)
    2 ounces cheddar, shredded

Directions

Mix all ingredients well in a medium bowl. Spoon into 6 well-greased muffin cups. Bake at 350 30-35 minutes, until set and lightly browned. Makes 3-6 servings (3 servings - 1.5 net carbs each) (6 servings - 1 net carb each). Each muffin is about 150 calories.

Oh, those sound VERY good! I am not quite at the eating "real" food again stage, but I am gonna try these out when I can.

Yeah I'm big on meat, eggs, cheese.  I got the idea from theworldaccordingtoeggface.blogspot.com she makes all these inventive little egg quiches.
