RECIPE: Ham and Egg Cups - Easy, yummy and totally adaptable

Last night while looking thru some low carb favorite recipes I came across and oldie but a goodie and thought I would share....

Pre heat oven to 400
- Use a cupcake tin sprayed well with PAM (make sure to spray the top of the tin too not just the cups) then layer in the following:

1-2 slices of ham of your choice - Line the cup with it over laping bottom and edges
Suprise - I call it suprise because I am always changing it up - I like diced scallions,tomatoes and red peppers for a simple one or cooked spinach w/ some carmelized onions  - My hubby likes hashbrown potatoes in his... OR whatever you like the options are endless
1 eggs -  just crack that sucker right in the cup
Sprinkle with cheese  of your choice - be generous!  (I like gouda on the spinach one)

Pop it in the oven for 10 minutes and voile totally yummy.
  The ham crisps up and makes a cup the goodies on the inside cook into hot gooey delight - they pop out easy and sit up on a plate by themselves.  This is my go too breakfast recipe for a crowd and my quick dinner recipe for me!  It is also a fun recipe for kids sleep overs - they can "design" their own.

You can mix this up a million ways
- A little Italy - change the ham to procuitto and the cheese to mozzerella or provolone - A little french add some mushrooms and its a baby quiche - Add some pico sauce and it is Southwest - Meat lovers with some bacon and sausage crumbles....

I know what I am having tonight!!!  Btw - they also make a great lunch the next day - just pop it from the fridge to your lunch bag and a few seconds in the micro and you have lunch!!!

I'm not a big cook,  plain and simple is my motto but these sound delicious and i am def going to try them,   i eat a lot of eggs and this sounds a fun way to eat them,  thanks for sharing sweetie   :o) jeani

These sounds awesome LaLa!! I do an egg bake in a cake pan...instead of milk with the egg mixture I use light sour cream and add in meat and veggies and cheese, you can even make the bottom layer hash browns. Kind of like one big omelette!!
Love love love the idea of the ham forming a little cup...I'm for sure trying this one!!!

This is a regular size muffin tin right...not a mini??

Ah yes, sipping the protein shake.  Soon you'll be on mushies soon I am sure and then you can have food again.  Hang in there - I will be 12 weeks this week and it seems like forever ago already.
