Italian Turkey Muffin Meatloaf=Yum

Just tried this today - easy and tasty

1 package Jennie O Italian seasoned ground turkey
1 egg
3 oz tomato paste
1/2 c Italian bread crumbs
1/4 c Parmesan cheese (grated)

preheat oven to 350
mix all ingredients in a large mixing bowl
use a Muffin tin to shape each meat loaf and place on foil lined baking pan or bake in the muffin tin
bake at 350 for 35 minutes
makes 8 servings

Just got back got the muffin pan but did not see the louis rich at Ralphs.  I'm in Ca also.  where did you buy it.

 I got it at albertson's.  They have taco seasoned also.  I think I saw it at gelson's too.  You could use regular ground turkey and add italian seasoning.

This looks good.

Question----In the recipes that call for an egg (be it this one or eggbites or really anything)---can you replace the egg with eggbeaters?     1/4 cup of eggbeaters = 1 large egg

I've used them to scramble but not much else. I'm really doing allot of eggs these days and thought it might be wise to switch over.

I use eggbeaters instead of eggs all the time in cooking, don't see any texture or taste difference.

I'm sure you could.  I only use eggs in recipes so it never occured to me to try eggbeaters.  Let us know how it works.

I bought a turkey meatloaf at Costco and had it for dinner tonight. It was really good, 6 carbs for 3oz. family thought it was good too. 2 per package.
