Sinus infections, organization and new recipes
So I've had a sinus infection the past few days, and it has kicked my butt! Even just walking made my jaw/teeth ache. Ugh. Finally feeling a bit better and did go out and walk for almost an hour tonight (3.25 miles). I am used to working out 6 days a week, so it's been rough missing it.
I haven't really been laying around and resting though. I went out on Saturday and went to the farmer's market, the butcher, & shoprite (we had no food in the house after vacation and I was craving home cooked meals!). On Sunday I decided I wanted to get some organization going in my house....I bought some shelves and hooks for my bedroom and organized my jewelry, hats, scarves, makeup, hair stuff etc. I also hung some coat hooks and shelves and put bins on our front landing (so sick of everyone dumping their coats, bags and shoes there!)
I made made cauliflower crust pizza for dinner on Saturday (with a revised version for my hubby...had to use vegan cheese substitute for him because of his allergies). They turned out awesome! I topped them with sauteed spinach, grape tomatoes, mushrooms and some fresh basil sausage from the butcher. On Sunday night I made 2 versions of stuffed zucchini, 2 versions of sauce, 2 versions of meatballs and 2 different kinds of pasta (no pasta for me!)....again, Eddie has many food allergies so I try and come up with creative ways to let him eat his favorite meals without his throat closing up!
Even though my job is completely stressful and yucky right now, and even though I have a sinus infection...I am amazed at how much more energy I have. I like this me so much better than the one who would have plopped her butt on the couch with a bag of (insert some snacky food here) and a glass of wine!

Sure the organization is impressive but your food looks super yummy! Makes me want to try making the cauliflower pizza!
