Huh...Fitday lists the nutrition as 250 calories and 17 grams of fat...http://www.fitday.com/webfit/nutrition/all_foods/dairy_and_e ggs/alfredo_sauce.html
Also 7 grams of protein. Of course values would vary according to the recipe and you can make alterations to reduce the fat, but 900+ calories! Not sure where that came from...

This is the FatSecret listing for the version I eat....

The thing to remember with creme sauces too, is that it's so easy to eat too much. While the listing at Fatsecret is for a cup, which someone probably wouldn't eat the whole thing, it's still really important to remember it's basically over 90% fat content, i.e., over 90% of the calories come from fat. I've had two nutritionists warn me that Fitday's information is not always correct, and likely runs low, so I don't use it. I'd rather err on the high side. I honestly have never heard of Alfredo Sauce that is only 250 calories for a cup. That would have to be a fat-free version, which I've never seen also.
One serving of Fettucine Alfred at the Olive Garden is 1220 calories. Granted some of that is the pasta, but most of the calories are from the fat in the sauce.

I with the latter few posts....what do I do with alfredo sauce?!??! GIve yourself a facial......the fat and egg protein will do your skin wonders...but I sure wouldn't eat it! If you want to try spaghetti squash - put a nice marinara on it....and some parmasan cheese.....its wonderful. I also make it with salsa and a little shredded cheddar........Susan

Alfredo sauce can be made with less fat as you stated.
It is great on asparagus and also spaghetti/banana squash.
I actually cook the squash in the microwave in microwave safe casserole dish about a 1/4 to a 1/22 inch of water for about 4 or 5 minutes. It depends on the size and the microwave strength.
