Turkey Meatballs

Ingredients:

1 pound ground turkey
¼ cup dry oatmeal
1 small onion (finely chopped)
¼ cup grated parmesan
¼ cup egg substitute
2 tsp minced garlic
Salt and black pepper to taste


Directions:

1. Preheat oven to 325°F.

2. Combine ground turkey, oatmeal, onion, parmesan, egg substitute, garlic, salt and pepper in medium bowl; mix well (use your hands for best results) until blended. Gently shape into 1- 1.5 inch meatballs. TIP: I use a small cookie scoop.

3. Grease cookie sheet or shallow baking dish with cooking spray. Place meatballs on baking sheet; bake for 25 minutes or until thermometer inserted in center reaches 165°F.

4. Serve as appetizer with favorite dip. Use in favorite Italian dish, they are great sliced on pizza. TIP: They freeze well. Make a double batch, let cool then toss in a plastic freezer bag, you will have something quick and delicious to use in the future.
