Recipes For Success

Mexico is as rich in heritage as it is in food. Settled by Spaniards back in the 15th century, many of its traditional recipes still remain. The sweet, savory and spicy foods that make-up this unique region can be found through not only Mexico, but around the world. As in most countries, each Mexican region takes pride in its own cuisine. From the seafood by the ocean and gulf to the pigs and cattle raised more inland. In addition, the warm climate lends itself to some of the best produce in the world.

There is much more to enjoy with this cuisine than the traditional high calorie American version of nachos, enchiladas, burritos, and quesadillas. Corn and beans are traditional staples and though they are healthy carbs, we have taken our menu on a different path. Brightly colored fresh vegetables look appealing and combined with herbs make the dishes low calorie and flavorful. We didn’t forget the tortillas! We’ve made them your dessert rather than fill them with higher calorie, higher fat food.

So tie on your apron, put on some music, and start the fiesta in the kitchen with a healthy, colorful, and tasty meal. Olé!


Quick and Easy Spicy Queso
Serves: 8
Serving size: ¼ cup

Ingredients
2 cups mild salsa
½ cup shredded Monterey Jack cheese
2 tbsp fresh chopped cilantro
1 tsp fresh minced garlic

Directions
1. Place all ingredients into a medium microwave safe bowl and cover with plastic wrap.
2. Microwave for 45 seconds, stir and microwave an additional 45 seconds.
3. If cheese has not melted an additional 45 seconds maybe needed.
4. Once cheese has melted, serve immediately.
5. Serve with raw cut vegetables.

50 calories, 4g protein, 2g fat (1.5g saturated), 5mg cholesterol, 4g carbohydrate, 2g fiber, 2g sugar, 480mg sodium


Poblano Cucumber Salad
Serves: 4
Serving size: ½ cup

Ingredients
2 cups peeled and chopped cucumbers
¼ cup chopped fine poblano pepper
1 clove garlic, chopped fine
2 tbsp chopped fresh cilantro
2 tbsp lime juice
½ tsp canola oil
¼ tsp salt
¼ tsp chili powder

Directions
1. In a medium bowl combine all ingredients and mix well.
2. Refrigerate until ready to serve.

Broccoli and Red Pepper Sauté
Serves: 4
Serving size: ½ cup

Ingredients
2 cups broccoli florets
1 cup julienned red bell pepper
2 tsp canola oil
1 tsp fresh lemon juice
½ tsp chopped garlic
¼ tsp cumin powder
¼ tsp chili powder
¼ tsp salt

Directions
1.In a medium sauté pan over medium heat, add oil.
2. When oil is hot add remaining ingredients and cook over medium heat until broccoli is aldente(slight crunch), about 5 minutes.
3. Serve immediately.

Mexiloaf
Serves: 6
Serving size: 4 oz

Ingredients
1 large onion, minced
½ lb ground turkey breast
½ lb lean ground beef
1 large egg
2 tbsp fresh cilantro, chopped
1 tsp dried oregano
½ tsp cumin powder
1 tsp garlic powder
2 tsp chili powder
½ cup plain bread crumbs
¼ tsp salt
1 cup low sodium chicken broth

Directions
1. Preheat oven to 375°F.
2. Sauté onion until clear and golden in a small non-stick sauté pan.
3. Place all ingredients into a large mixing bowl and thoroughly mix. 
4. Shape meat mixture and place into a medium size loaf pan.
5. Bake 45 minutes or until done. Internal temperature needs to be 165° F degrees.

180 calories, 21g protein, 6g fat (2g saturated), 70mg cholesterol, 11g carbohydrate, 1g fiber, 2g sugar, 250mg sodium


Cinnamon Tortilla Chips
Serves: 8
Serving size: 4 chips

Ingredients
Four 8-inch flour tortilla 
2 tsp sugar
1 tsp cinnamon
1 tbsp melted butter

Directions
1. Preheat oven to 375°F. 
2. Brush tortillas with a small amount of butter
3. Sprinkle ½ tsp sugar and ¼ tsp cinnamon on each buttered tortilla.
4. Cut each tortilla into 8 triangles and place on pan.
5. Bake for 5 minutes or until golden brown and crispy.
