Roasted Chicken

2 lb chicken
1 sweet onion chopped
1 tsp salt
1 tsp garlic powder
1 tsp onion powder
1 tbl paprika
1 tbl black pepper
1 tsp red pepper
1 tsp dried thyme
Preparation
Combine all the spices in a plastic bag. Remove giblets from chicken cavity and pat dry the entire chicken with paper towels. Rub the spice mixture all over the top and sides of the chicken. Sprinkle some of the mixture inside the cavity for extra flavor. Place in a large bag that can be resealed. Place in refrigerator overnight. When you are ready to roast the chicken, place it in a medium size roasting pan. Put the chopped onions inside the cavity of the chicken. Roast uncovered at 250 degrees for 5 hours. Baste the chicken with juices every half hour after the chicken has cooked for about 1 hour.
