9 bean soup...mmm good

I am a soup guy, so I bought a massive container of the 9 bean soup mix from Costco. The recipe is very simple on the container, add more or less to taste. The soup is awesome.

It has all the fiber, protein and nutrients for us WLSers. I added spiced diced tomatoes and extra garlic to mine.

Jason...I'll have to look for it...I'm soup gal...But whenever I make chili, or bean salad...I always use at least 6-8 kinds of beans....in my crockpot!!  Patti K.

Yes I bought this too. I like to cook a pot roast and add it to the soup ... NUMMY!

Is this 9 bean soup mix in a can?  Is there liquid or is it all beans and seasoning?  What area should I look for it at Costco?  I don't get to a Costco too often  so I've never seen  this product!  Thx

Sylvie it's a big container of mixed dry beans.  You don't have to get the ones at Costco.  You can get dry bean mixes anywhere.  I think I picked my last bag up at Food Basics in the International aisle.  I use dried beans in soups lots.  This is the recipe off the back of the Costco one.

Ingredients

  • 2 tbsp olive oil
  • 1 coarsely chopped onion
  • 1 clove garlic, finely minced
  • 1/2 cup chopped celery
  • 1 cup mixed beans (this assortment contains: green whole peas, green whole lentils, red split lentils, pinto beans, white beans, red beans, light red kidney beans, black beans and black eye beans) I'm sure you can use any assortment of beans.
  • 4 cups chicken stock
  • 2 cups water
  • 1-28oz can diced tomatoes
  • Salt and pepper to taste

Instructions

1. Soak beans in cold water for 12 hours. Drain before using.
2. In a large saucepan, over medium heat, saute olive oil, onion, garlic and celery for approx. 5 mins until onions and celery are translucent. Add beans, tomatoes, stock and water. Add salt and pepper to taste.
3. Increase heat to high and bring to boil.
4. Reduce heat to medium-low. Cover pot and simmer for 1 1/2- 2 hours. Stir occasionally.

Per 1/4 cup: Calories: 130 Fat: 0.5g Fibre: 7g Protein: 9g

Yield: 4-6 servings
Cooking Time: 1 1/2 - 2 hours

NP.  I throw sausage chunks in mine, even the spicy turkey ones work good with no added fat and some smoked paprika to change up the flavour of the tomatoes.  I actually posted a hearty bean soup recipe on the recipe forum based loosely on this exact recipe.
