OT: Refrigerated Veggie Salad
Hey y'all! (I'm channeling my inner Paula Dean today!)
This salad is so delicious and so WLS friendly! I just have to share it with you. I made this yesterday with fresh veggies from my garden and it is wonderful! I plan to keep a bowl going all summer long.
Dressing:
3/4 c. apple cider vinegar
1/4 c. water
2 Tb. sugar OR 1 Tb. Splenda for Baking
1 tsp celery seed
1 tsp mustard seed
1 tsp salt
1/4 tsp black pepper
1/8 tsp red (cayenne) pepper, if desired
Veggies:
1 med green bell pepper, thinly sliced
1/2 large SWEET onion, thinly sliced*
1 large cucumber, peeled and thinly sliced
1 c. baby grape tomatoes, halved *
Combine the first 8 ingredients in a small saucepan and bring to a boil. Boil for 1 minute, then set aside to cool.
Prepare vegetables and place in a tupperware-type bowl with a good lid. Pour dressing over veggies, seal bowl, and shake to toss dressing. Chill 8 hours or overnight.
* You can use whatever type of sweet onion you have, e.g. Vidalia, 1015's, red onion, etc. Same with tomatoes. You can use baby grape, cherry, roma, etc. If you use a larger tomato, then either quarter it or cut it into eighths, just so it is bite sized.
