I couldn't stomach cottage cheese alone, but I did find a great recipe that uses cottage cheese.  Here is the URL to the site and the recipe.  You don't have to use the graham cracker crust. j Just make it and put it in a container.  At the stage you will be at, you can have everything that is in it.  Use sugar free cool whip instead of fat free.

Also, at the soft stage, Taco Bell pinto beans are a great choice.  You'll get 2 meals out of it.

My family thinks im nuts but i love to mix cottage cheese with some egg white, italian herbs and a little parm. Put it in a dish with some marinara, sprinkle with mozz and heat in the microwave.
yummy!
I also love it with salt and pepper
nutmeg and splenda with a drizzle of S/F jelly or jam.

Drain the cottege cheese.  Add a container of plain Greek Yogurt and a pkg of sf lime jello.  Fold in a tub of sf cool whip.  I also add drained crushed pinapple, but that is a while off for you.  I love the stuff.

How much cottage cheese? How much yogurt? It sounds like what my grandma used to make and I LOVE it sooooo much.

I get the big container of plain Fage 0% Greek yogurt and a big container of 0% cottege cheese drained.  I don't know the exact size.

I put cottage cheese and a tiny bit of mozzarella cheese on a baked potato with some garlic spread seasoning (from Costco) you can use whatever seasoning you like. It was a pretty small potato and it lasted me 2 meals.

I don't care for cottage cheese myself, but was given a recipe for Mock Rice Pudding...and I am addicted!

1 box vanilla instant sugar free fat free pudding
2 c. cold fat free milk (skim)
Cinnamon to taste
Nutmeg to taste
1 16 oz. container of 2% cottage cheese
Raisins, if desired

Mix pudding, milk and spices until pudding begins to thicken.  Fold in cottage cheese, mix thoroughly.  Add raisins (if desired).  Chill for one hour.

At your stage, I would forego the raisins, but the rest should be good.  Enjoy!  :)
