Meat Crust pizza (review and pic)
Well first off I made a modification to the recipe. I did the version using Fiber One instead of bread crumbs and I added a packet of onion soup mix. Oh yeah, and I only used the whites of the eggs. I figured since meat is not dough and dough is not meat that meat alone was not going to be a good flavor base. I think I was right.
So anyways...I was most dubious about it finishing in 10 minutes. But I put it on the cookie sheet and used a nonstick sprayed rolling pin to roll it out. In the future I think I'd go a little thinner than I did this time (I'll explain why in a minute). Put it in the oven on 375...and damn if the thing wasn't done in 10 minutes! So I loaded it up with toppings. Sauce, cheese, pepperonis, turkey smoked sausage, more onion and green pepper. All the while I wouldn't tell the divas what I was making (sometimes telling them gives them a chance to decide in their heads they hate it before they taste it so I rarely divulge my experiments).
Stuck it in the oven and let it go another 10 minutes. It did shrink up a bit and I was worried. Would this be enough for the divas? Took it out (by this time they'd figured it all out) and tried to cut it with a pizza slicer. Was a bit too thick for that though so I just went with a knife. Tasted...and it was good. It doesn't taste like pizza though. Not right off the bat. Pizza burger...yes. Pizza? No. I added some parm cheese and red pepper flakes and that made it more pizza-esque. But would the divas like it?
They were looking at the thing like it was an alien food. So I give them a slice with a side of Caesar salad. Verdict: love at first bite! Le petite diva even implored me to serve this at my cooking party.
For us...this thing is FILLING!!! I only ate a tiny sliver and I am full to bursting. I made it with beef so that's prolly why. Definitely something for the whole or at least for a weeks worth of lunches. Not sure how this reheats. I'll report on that tomorrow.

I have two versions of the recipe, as created by OH Member "Plump Kitty". Her name may be updated since then....
Meat Crust Pizza
1 lb of ground beef extra lean
Pizza Sauce
Light mozzarella cheese
Any other pizza toppings you enjoy
20 All Wheat Crackers Crushed
2 eggs
Mix the ground beef, eggs and crushed crackers together and press into a cookie sheet. Bake at 350 for 10-15 mins until brown. Then top like a regular pizza and cook an addition 10-15 mins.
Meat Crust Pizza 2
2 cups raw extra lean ground beef
4 whipped eggs
1 c. fiber one cereal (cru**** in the blender after measuring)
Mix this to a paste consistency and pat tightly into a 15 x 10" baking pan. The crust should be very thin. Pat it as tightly as you can to keep it from shrinking in the oven, if you use less than extra lean ground it will likely shrink some. Bake this in a preheated 350 degree oven for 10 minutes or until brown. Take out and top with favorite pizza toppings. Bake again for 10 minutes or until done.
