Mini Meat Loaves

Love the idea of putting the meat loaves in a muffin cup

2 pounds extra lean ground beef

1 envelope Lipton Onion Soup mix

3/4 cup plain dry bread crumbs

2 eggs (can use Egg Beaters)

3/4 cup water

1/3 cup reduced sugar ketchup

Preheat oven to 350 degrees. In large bowl combine all ingredients, mixing well. Spray muffin tins with no-stick spray. Fill muffin cups with 1/3 cup of meatloaf mixture. Press lightly to smooth the tops. Bake uncovered for 40 minutes. Makes 18 to 20 mini meat loaves, which freeze beautifully.

and I have a great tasting sauce to go over top, I might make these tonight

in small bowl mix 1/2 cup of reduced sugar ketchup and
1 teaspoon of Worcestershire sauce Brush on top of each loaf.

I wish I had the calories for this but the recipe didnt come with it

Funny you brought this up, I just fixed these for supper last night. My husband got a real kick out of it.

 Pre-surgery, I used to make meatloaf "cupcakes" with mashed potato "frosting".  The kids loved it.

246 in Dec 2008 before banded 1/28/09 at 215 lbs, band crapped 9/09 at 170 lbs and struggled with it and regained to 203 revised to bypass on 8/1/11 and am very happy.

This recipe is a current fav for me - I increase the buffalo sauce in them by brushing a bit on the tops as they bake! A half batch makes 12 mini muffins, ala Eggface style. I freeze them and have them on hand!

Biggest Loser's Buffalo Chicken-Blue Cheese Meatloaf


    Olive Oil Spray
    2/3 cup Old-Fashioned Oats
    1/2 cup Fat Free Milk
    2 1/2 tbsp Buffalo Wing Sauce (or more to taste)
    1 pound ground Chicken or Turkey
    1/2 cup Finely Chopped Celery
    1/4 cup Shredded Carrots
    1/4 cup Finely Chopped Sweet Onions
    2 lg Egg Whites (lightly beaten)
    1/4 tsp salt
    2 oz Crumbled reduced-fat Blue Cheese


Directions

Preheat Oven to 350 degrees

Lightly mist 9x5 loaf 
pan with Olive Oil Spray

Combine Oats and milk in medium mixing bowl and stir to mix. Let stand for 3 minutes, or until the oats begin to soften.

Stir in the wing sauce until well mixed.

Add the chicken, celery, carrot, onion, egg whites and salt. With fork or clean hands, mix the ingredients well.

Add the blue cheese and gently mix to combine.

Transfer mixture to prepared pan and spread so that the top is flat. Bake for 35 to 40 minutes, or until the chicken is completely cooked through and no longer pink.

Cut into 8 slices and serve immediately.

Makes 4 Servings

That recipe looks so good. I will have to try those as well. I really enjoyed the mini meatloaf and I love that I can freeze them and take one out at a time pop it in the microwave and its ready to go so easy
