My New Take on Chicken Soup
Yesterday I commented that I have a pretty wicked cold. Pre-WLS I would have made myself a huge stockpot of homemade chicken soup to go along with my Vick's scented Tissues and Advil. So what's a girl to do post-WLS - buy some Tylenol and see what experimental wonder can come out of my kitchen. The result was a yummy and rustic chicken stoup that is delicious! While I haven't developed a clever name for it yet, allow me to share my recipe for Chicken and White Bean Soup.
Ingredients
2 Rotisserie Chicken Breasts Diced
2 Leeks (white part only) diced
1 Fennel bulb diced
2 tbls EVOO
1 cup carrot strings
2 cups sliced mushrooms
1 can petite diced tomatoes (drained)
3 cloves garlic (minced)
1 can navy beans (drained and rinsed)
1 pkg fresh tarragon (chopped)
1 bag of fresh spinach
2 boxes chicken broth
Directions
In your stockpot add 2 turns EVOO, leeks, fennel, garlic, carrot and cook till soft. Add mushrooms, tomatoes, beans, tarragon, spinach and broth. Simmer for 30 minutes adding salt/pepper to taste and enjoy!
The soup has a hint of lemon and licorice from the fennel and tarragon but it isn't offensive. A great alternative to chicken noodle soup. When I put the ingredients into MFP for 12 (1cup) servings it came out at 173 calories, 13 carb, 3 fat and 25 protein (per serving).
Does anyone else have a WLS friendly at-home cold remedy/recipe to share?

for nasty colds: I would also add some ginger (fresh) and some hot pepper flakes. That really helps with sinuses. Ginger gives a little warmer flavor - but really helps with a lot of things.
