Indoor pressure smoker = yummy yum in my (tiny) tummy!

Almost 1 year post op and tolerate most meats if they're tender. I just discovered pressure smoking and my Emson counter-top smoker makes the most tender, juicy meats, with a fabulous smoke flavor! I LOVE this appliance! I ordered online from a 'daily deal' website a couple of weeks ago and have cooked thick-cut pork chops, boneless skinless chicken thighs and breasts, hamburger patties, and smoked potatoes (I could eat them all day but stop myself at a half a small one).  So far I like the chicken thighs best. They almost melt in my mouth. No, I don't work for the company; I'm just so thrilled with this little guy that I had to share. 

I haven't posted much lately. Just enjoying life at a healthier size. We've tackled a kitchen remodel over the winter, and now that spring's here, I'm pulling out old shrubs and trees to start a small water garden near my front entry. Things I would never had been able to do at 300+ now are so easy!
