Corn on the cob? Yes or no?
We process corn just fine. There may be aspects of it that you want to stay away from. But it is digested very well.

I'm only two months out and corn isn't in my program, but I would talk to your NUT for the definitive answer for your program and then make the choice as to what is best for you.

I'm 2.5 months out and bought an ear at a farmer's market last weekend. It was small, young (tiny kernels), and super delicious. I ate it with spray butter and seasoning salt, loved every bite, and still had no problem getting my protein in for the day.
My plan allows for anything you can tolerate after you've met (or have a plan to meet) your daily protein goal, as long as you keep refined carbs to a minimum. I stay away from bread because it's a huge addiction and trigger for me, and I don't eat sweets because I don't want to find out if I'll dump, but there's nothing wrong with corn once in awhile. It's one of those glorious foods I LOVE but can also avoid overeating.

Corn is a butter and salt delivery device, the same way bread is a vehicle for meat and cheese.
