Chicken salad recipes

Does anyone have any good chicken salad recipes??  I am getting tired of pureed tuna salad.  I don't want to get bored and start eating the wrong things.  HELP!!! 

SN:  I am so happy right now!  I am 1.8 lbs. away from being in the 200's.  I have not been in the 200's in about 10 years.  I had set this as my end of the year goal but it looks like I am going to get there early!!  WOOHOO!!!

 I have really been enjoying chicken w/ a drop of hot sauce, like a buffalo chicken thing, yum.

I bet people can share some creative ideas, just remember to stay away from traditional formulations - you don't want to double your calories by just adding a bunch of mayonaisse.

Sometimes I take shredded chicken breast, add a little lemon juice, lemon-pepper spice, and sour reli****'s sorta like chicken salad.

Hi there,

I am also on purees and am waiting for some ideas from the other folks here! Here is one I found on a website altho I haven't tried it yet:

1 can costco canned chicken in water
3 tbsp lite caeser dressing
one small packet of parm cheese

I got the chicken pureed in the food processor then mixed in the dressing and parm cheese. It makes 3 2oz. servings…. 

btw, that's is great 1.8 lbs. away from 200's! I am 6 lbs. away from the same goal! Haven't seen my weight begin with a 2 in over a decade too, so I am totally with you on this one!! WTG!

 This is a favorite of mine, and my kids like it too. I typically use mostly greek yogurt and only a taste of mayo or miracle whip. Can also add some chopped walnuts.

Curried Chicken and Grape Salad

Combine 2/3 cup cooked, chopped, skinless chicken with 2 tbsp diced celery, 1/2 cup halved grapes, 1 tbsp light mayonnaise, 1 1/2 tbsp nonfat Greek yogurt plus 1/2 tsp curry powder.

Try using plain greek yogurt instead of mayo if you can handle the taste. I've also found that mixing a pack of protein mix in the yogurt makes a super high protein-packed pudding of sorts. I'm slightly lactose intolerant, so this has been a life saver for me!
