Yipee! I found it, I found it, I found a great low-carb high-protein low-cal protein bar recipe. I made these bars two days ago and they were a hit with everyone I shared with. AND as a bonus, I get to use my not-so-tasty vanilla whey protein powder I've had sitting there for weeks because I didnt like it. Yes, you CAN cook with protein powder - pretty neat, right?!

These bars are moist and delicious and are YUM with a cup of decaf. It's not a meal, but a snack, since they are aprox 64 cals each but ofcourse eat responsibly (because they are hard to resist).

The only thing I added to this recipe was ground flax for the added benefit and I used Splenda instead of Stevia because it was what I had. I will be using this as a basis for many protein bar variations to come!

Nice!  A more cost effective way to do protein bars.  Looking forward to making these over the weekend!

I don't have vanilla protein powder, but lots of natural.  Can I just add in some vanilla extract?

Yes, that won't make a difference. The recipe calls for vanilla extract already, but maybe adding a little more would be fine.

I made a lemon/poppy seed version of this one, ommitting the apple, vanilla extract, nutmeg, cinnamon, and allspice and instead adding lemon rind, lemon extract, and 2 tablespoons of poppyseeds and it was to die for! Me best variation yet!

Have fun with it - I know I am :)
