 Que bien que vas a hacer un blog.  Being half Costa-Rican, I'm missing the typical gallo pinto rice and beans with a side of platanos fritos.  Beans by themselves just aren't the same.  And I can't figue out how to manage Costa Rican Tamales even slightly.

I've recently discovered quinoa, to substitue for other grains, and like the flavor, but still more carbs than I need right now.

I'm Puerto Rican and Ecuadorian but living in Southern California the only food here is Mexican and it's rare to find Latinos from countries besides there. I think it would be nice to go somewhere and see a wls friendly recipes for empanadas, platanos and mofongo!
