My parents just came and stayed with me for the past few days and my mom and I spent a lot of time talking about food choices.  She is a severe diabetic....that still chooses to eat tons of bread, sweets, fast food, etc...and then reach for the insulin.  Drives me insane because I worry about her SO much! One of our convos was about fast food and how since my sisters and I have all moved out, it's just easier (and cheaper) for them to run down to McDonalds or Hardees. So, me and George Foreman spent the last few days educating her! This is pics of their breakfast this morning...much healthier and more satisfying than the hot cakes, biscuits, hashbrowns, etc from those other places! Also, just wanted to note - I don't talk about lifestyle changes, diets (bad word alert!), etc with them unless they bring up the topic or they want to ask questions.  I have spent the majority of my adult life being overweight and it's not my job to judge anyone!!!

I know Jenn and Lee (I think) talk about the tri-color peppers sometimes....these have always been one of my favorite snacks!  Good raw but they are AMAZING brushed with a tad of olive oil and cooked on the foreman - so sweet!


Grilled chicken, little pepper jack melted over it, grilled peppers and onions.


Then top with some homemade salsa and some greek yogurt....yummy, healthy, 10 min breakfast!

Welcome! Hope you like it! If you don't cook veggies on the foreman a lot and you like your peppers and onions really done (almost carmelized) then leave them on the grill about 10 min or so, tossing and turning them a few times for even cooking. Usually I spice the chicken with salt, cumin, garlic powder, onion powder, black pepper and maybe some cayenne pepper....good stuff!  Hope you like it!

Hope you like it....look up at my response to Shagdoll for some of the spices I use...I just get tired of bland chicken and this gives it more of that mexican flavor that I LOVE!

My mom and my husband are both diabetic. While they both indulge in things that they should not, they both have other habits that HAVE to be controlled or they are going to kill themselves. It also makes me crazy. My mom never gets enough sleep. She is a night owl (like I am), but then often has to get up in the morning for other obligations. Getting up at 10 a.m. is great, but not when you go to bed at 5 or 6 a.m. It does horrible things to her blood sugar. My husband works outside all day and often skips lunch because it is so hot that food makes him nauseated. So by the time he comes home at 6 p.m., he is ravenous and eats everything he can find. Then he sits on the couch and goes to bed early because he is exhausted. All of those calories go straight to fat. Just little tweaks and they could be so much healthier (says the woman who had to have most of her stomach removed in order to control her eating :P ).

 I understand about working out in the heat.  I did that for years.  I wanted to drink more than I wanted to eat.  I often went to Wendy's and got a little burger with a giant icy Coke, aka how to work your tail off and still weigh 240 pounds.  I soaked my clothes through with sweat.

No idea if he would be open to it, but maybe you coud turn your hubby on t iced protein coffee?  I mix a mild vanilla whey powder (ON Vanilla Ice Cream) with cold strong coffee, almond milk, and lots of ice.  He could take the coffee/milk in a pre-chilled thermos and then mix in ice and protein at lunch time.  It is cold, sweet, and not heavy at all with the unsweetened vanilla almond milk.  Chocolate protein works too.

I'm going to pass that on to him and see if he'll give it a try. He doesn't have much of a sweet tooth, but he could probably make it less sweet by choosing different flavors. We live in rural south Texas, and the combination of temperature and humidity is truly miserable.
