Spices should be fine whenever you're comfortable doing it.
You'd be surprised what I added to my tuna fish during the soft food phase. As the two weeks progressed I added anything I could to spice it up. Just remember, no water with meals so factor that in if you like it spicy.
if by condiments you mean mayonnaise, say your goodbyes now.
