I had ground beef during my pureed phase (weeks 2-4) with no problems at all. I have yet to try a juicy steak.
I also had beef tartare a few days ago - no issues. It was delicious.

Oh, I thought you were asking about cow specifically. I ate every type of meat (cow, lamb, pig, chicken, and fish) during my pureed phase with no problems. Just, you know, pureed.

You remark about cow reminded me of a time when my teenage niece from Ireland was visiting. I asked the kids where they wanted to go and they said McDonalds. My niece had never hard of McDonald's and said, "Is it dear?"
They all replied, "No, it is cow" not realized that she was simply asking whether it was an expensive restaurant.
Real life begins where your comfort zone ends
At 12 days post-op I added fish back into my diet and at about 3 weeks poet-op I added chicken. i haven't had problems at all. I actually felt like I had more energy. I still haven't tried beef but I think I might this week.
I will warn at 4 weeks I tried turkey jerky and even though I chewed REALLY well it was the only think that has hurt to eat since surgery.
