So why does our nose run!!! I'm out to dinner with the family for my daughter's 11th
It's actually very common for sleeved people, especially relative newbies. Your new sleeve is tiny and if there is too much food in it, or it lands in the wrong position, etc. it will press up against the vagus nerve, which runs near the top of the stomach. The vagus nerve controls a lot of things in the upper body, including mucus production, burping, hiccuping, coughing etc. So many sleevers will get a runny nose, the hiccups, or a few burps to signal when they have eaten too much, or possibly too fast. It's a cue to tell you to watch what you eat next time -- smaller portions and slower eating!
A lot of people get a runny nose (or hiccups) early on when we get full. The wings might have filled you more than your usual food does. It's because the vagus nerve was cut.
Some also get the runny nose when engaged in certain indoor non-exercise activity . . .

My operative report specifically states that the vagus nerve was identified and preserved, not cut. I am one that gets the sneezies and a runny nose (one kleenex will usually take care of it so nothing like what the OP describes) and I asked my surgeon about it. He said its because of pressure on the nerve which runs from stomach to brain via the sinuses so if its tickled, it tickles back. And you get nasal ******s. So even if not cut or damaged in any way, it can trigger the sneezies. I actually prefer this to burping or the hic ups. I enjoy a good sneeze usually, except after the LBL. Then sneezing was like the fires of hell. Otherwise, its quite enjoyable. And a sure bet signal to stop.
