At the Easter event this last weekend someone made this amazing dip, that I ended up eating (minus the chips & crackers) but wow was it good!  And sooo easy, a combo that really works for me. 

Brown a tube of ground sausage/drain.

Drop a brick of Cream cheese in a crockpot with a small can of Rotel tomato mixture. 

Add the sausage on top, let it melt and meld on low and wha-laa. 

They tripled the recipe as it was a large crockpot but wow this was sooo good and easy.  I hunted the family down who made it thinking it would be some fancy long list of things, but no.  Even I could do this! Im making this for the next family event later this mth, and Im just waiting for the praise (no one was at the other event ;-)

that does sound good.  I love sausage.  I do a rotel dip that is just rotel and velvetta.  It's good too and really easy.  I would have to hide the chips and just have celery.

Oh yum!  This sounds so easy!  You can mix it up too with some green chilis (if the Rotel doesn't have them).  You could also use spicy or maple flavored sausage.... make it as spicy or mild as you like!

I have to giggle, when I saw dip as the topic, I thought, 

Why yes, I married my favorite dip! lol

I think I might be a little slap happy from the day!

Is the Rotel tomato mixture just regular tomato sauce?

No Rotel has chilis in it.  It comes in a mild and hot and maybe a regular.  The mild is plenty spicy for those who aren't into hot.

I make one with ground beef, diced tomatoes, taco seasoning and fiesta blend cheese

That's alternate recipe sounds good also with the taco seasoning & the other with the velveta.  So many options!!!

 When the folks who gave me the recipe told me about it, they also offered up the option of the spicy Rotel with the spicy sausage as an option depending on the crowd of whos eating it.  I'm debating which way to go right now for the weekends batch.  And I Love the idea of celery as on option!  At the party last week I just had a small scoop to eat with a fork, but even then it was sooo good!
