Wanting to get back on fitness program

I had my RNY on 2/10/13 and have dropped 120# since the surgery, over 170#'s overall. I had been going to the fitness center 5-6 days a week until mid-December when I had a total hip replacement of my left hip. Now 19 days out I've had 2 PT appts. and have walked nearly 4000 steps yesterday and today. I am really itchy to get my driving rights back so I can resume my early morning fitness center routine. Hopefully in the coming week.
As my 1st surgery anniversary comes ever nearer I have several things I wonder about...
1. Although I've made it to my goal weight, what might I look like, feel like if I were to lose even more weight? At 225#, my body fat % was 15.6%... If I were to go under 200# will I be losing too much muscle mass in the process? Can I even get below 200# without having a skin removal procedure? Time will tell...
2. What do I need to do to "land" at a weight and maintain that weight without gaining? My Nut's never ending chorus is to only eat at meals, drink snacks and do not eat anything outside of meals. While I can't argue with her professional knowledge and I am certain she has my best interests at heart I can't help but wonder if I need to worry about the little snacking I do when I am continuing to lose weight? I do have an occasional spoon of peanut butter... or a few graham crackers... or a handful of almonds... But not incessantly, nor every day for that matter. Will these get me into trouble or are the merely the beginning of a slipperly slope of eating more and more crap foods as time goes on?
