Kay asked me to post while she is away romancing and having a fabulous day for her anniversary... so, tell me, what did you eat today? Even if you normally don't post, I would love you to post today. Nancy B's homemade high protein soup: *s*..I simply get fresh beef bones from the butcher and simmer it for several hours , then I added 3 pounds of extra-lean ground beef and let that simmer as well. I added ground onions, carrots, garlic slivers, parsley, celery, leeks, a few pinches of summer savoury, a handful of pearl barley and crushed plum tomatoes( all good carbs). Continue to simmer for hours until the veggies are soft and falling apart and the broth thickens and reduces. Then cool overnight in the fridge and skim the fat off in the morning...that really cuts the calories back! The soup actually becomes so thick, it's more like a stew. I make a huge pot and freeze it in 2-cup containers...when I heat it up, I stir parmesean cheese through it and sprinkle shredded cheddar on top for extra protein. My pouch, Rufus, is very sensitive...I cannot seem to handle dense foods like meat....so this soup is easy to get in with the meat and veggies so fine..and a good portion of protein per serving *s*.....It's easy to make and very flavourful! *s*.
