Protein in Hot Liquids
Ok, I know that there has been a lot of conversation regarding the breaking down of protein in hot liquids.
I called ProSynthesis, the company that makes Unjury Protein Supplements. ... Since I have been having Protein Coffees or Protein Lattes every morning since March
They have seen no evidence that says the protein breaks down. The research actually supports the supplements being added to hot beverages. There is not a change in the Amino Acid structure (this would be required for the protein to break down) The protein quality stays the same. The only caution they gave was that if you heat it above 130 degrees, it would clump (I would call this curdling) other than that the protein is fine to add to hot beverages.
This is one companies' research and information. Anyone else go to the source for info? If so, please share.

Hi Jen, thanks for posting this.If protein breaks down in ho****er then why do they say on the label to mix in hot / cold beverages. I do not see evidence either and I don't worry about it. I have coffee daily with protein and I do see it clumps if it is mixed in the coffee so I pour in 8 oz of milk and then the protein powder and shake it then add the coffee.

Thank you--this is very useful, as I always think I should put mine in with cold coffee and then blend-erize everything.
It would be great to just mix in some pro powder with hot coffee and milk, stir briskly and have some pro out of the way---so again, thank you! ( I love the pro frappes I make, but in the AM I want good old HOT coffee

I have a clumping problem at times, but found that if you just put a little of your liquid in and use a whisk to unclump, then you can add the rest of your liquid.
Jen, like you, I love my Protein Iced Mocha Latte's. I use 1 scoop vanilla protein, 1-2 tsp. decaf espresso powder, but instant coffee should work, 1 c Calorie Countdown Chocolate milk, and 2 pkts. splenda. I mix and add 5-6 ice cubes. Yummy!

A couple months ago when I starting questioning this, I called Nectar, IDS and Unjury and they told me that protein does not break down in hot liquids. Nectar suggested keeping the water under 140 degrees so it wont "clump".
I'm happy it doesn't break down because putting protein in coffee is my favorite way to drink protein.
