You know how when you make a grilled cheese so of the cheese oozes out and gets a little toasted on the pan? What if you could have that without the calories of the bread and the excess fat? My hubby puts sliced deli cheese (cheddar) in a non stick pan (dry) and heats it slow and low. The fat cooks out as it heats and he drains it out into a shot glass, so we see what we don't eat. It gets golden brown (real light) and hardens as it cools to make a chip. It's the tastiest and believe it or not it's actually filling. Not to mention lower in fat than uncooked cheese. If you like toasted cheese as much as me you'll love this. Oh and it breaks into tiny miniscule pieces (cheese dust in yer mouth) so you can also eat it slower and chew, chew, chew! He says it's an old family recipe and he didn't want to share but I convinced him this would be the right thing to do! Gayle

I've done something similar when making quesadilla's at home. My son and I fight over who gets the crunchies. I'd never thought of making a full fledge meal *snack* out of it though....hmmmmm Va

This is a staple of Atkins dieters...fried cheese. Sounds worse than it is because you're frying it - but you are right...you are dumping off a lot of fat. They are wonderful! Dina

You can do the same with spreading a light layer of grated cheese on a plate and nuking in on high in the microwave until it bubbles and turns a bit brown. You have to let it cool before it gets hard. I used to spread pepperoni on it--don't know how that would set now! Joy

you can also buy the things called just the cheese that is the same but different flavors.

My favorite is the Pepper Jack. I don't think it'll work with cheese slices, but then I'm not the one cooking them so who knows!? Who would have known it was so popular! Gayle
