Ok I made this and WOW .  Goooood.  Be sure to use the rum extract... feels like a nice after dinner drink. YUM.  I am gonna use it as a base in protein shakes.  Add vanilla protein powder and ice and blend. YUMO

I am going to whip up a batch to take to work this weekend for the girls.  We all need to eat healthier and honestly I am tired of hearing them whine how much weight they have gained (sigh, nurses are the worst!) and so, I am trying to show them other alternatives without feeling deprived.  

Aw, sorry to hear about your migraine.  My friend gets those that I work with and it really puts her into a tail spin.. life basically stops till it ends.  I cannot imagine.  Bless both of your hearts.  So glad you are feeling better now tho.  Yum, I love SF pumpkin cheesecake and I even have my family loving it!  I think pumpkin is magical to work with as far as SF stuff is concerned and of course cream cheese (fat) never bothers me lol.  I need to try it with light cream cheese and see if it still holds its consistency.  What do you use?

I hear ya, the weather is nuts.  We have tons and more on the way coming.. lots more I am afraid.  We have felt very shut in this week.  But I had a respiratory virus of some kind and aaron a stomach bug so I guess it was the best week to have that happen and before Christmas.  I won't complain too much as its the first time I have been sick since surgery other than an ear infection I think.  I had labs drawn today and I bet my white count will be elevated some because of that.  I am always worried about the diabetic numbers (sigh) i hope they come back ok.  I cannot imagine hearing "you are diabetic again" and especially since I have played around with sugar a number of times and well I just don't wanna hear that.  My fasting numbers are good but its the long diabetic number.. hgba1c I am worried about.  ugh. When i have reactive hypoglycemia I know its b/c there was a spike in my glucose level to allow for the rush of insulin to create the low numbers.  All that bouncing around scares me and I have done that enough even on weird stuff.

That stinks you have to miss support group.  It is such a big part of my life too, I hear you on that.

Speaking of support groups, OH has approved me to be an OH leader and I get training in January.  I will have my own forum and hope some of you will participate with me.  I am excited about it.

Hi Molly!  Good to see you posting!  Glad you made it home safe and sound!  We have 1 foot on the ground of snow now and getting 6-9 more inches tomorrow into friday and then another round on saturday.  Guess I am taking an extra set of work clothes in case I get snowed in.  It has happened to me every year so far. :(  Not fun.  I agree, people just don't know how to drive.  I myself, hate driving in it and avoid it if I can at all costs.

I think your goal sounds great!  Mine is also not to get in over my head this year and maintain my weight where I am at - 143.5.

I go to my doctor to weigh in on january 9th.  So at least after the christmas time I have 2 weeks to whip it into shape and get even lower but trying HARD not to put it back on.  Last time I weighed in I weighed 140 clothed.  I would like to see that again of course but I will take 145 clothed but really want NO more.  


I also had 7 viles of blood drawn today.  My surgeon orders certain labs and my PCP too and of course there are my requests! haha.. adds up to about 1500-1700 dollars that my insurance tackles thankfully.  At least they have every time so far and for hubby (knock on wood).

I think staying away from the cookies is the best thing for me personally.  I hear ya on the sugar free cut out cookies but man just too tempting for me, as I love the real deal.  Makes my mouth water lol.  I made a SF pumpkin cheesecake yesterday and enjoying a sliver a night of that right now with a simple pecan crust.

I am not getting any exercise in these days.  I have been sick sick sick the past week and before that just seems like it was running to kc for thanksgiving, this time of the year always goes so darn fast.  I was looking at my schedule for january though.. wow talk about a slow down!  I am greatful and I recommiting to the gym.  Who else is with me?!?!?!  I am so there! My goal is to run another 1 or 2 5ks this spring and then start training for a 1/2 marathon.  God help me LOL.  All I know is this lack of exercise is horrible.  I hit the gym spotty like but not near enough.

Good evening, everybody!  Hope you had a great day and stayed safe and warm.  I was thrilled to make it home safe and sound today...accidents abound here in town with this latest storm.  People forget how to drive in snow, I swear. 

Anyway...  Sorry to whine.   I haven't been around much but have created a little unofficial goal for myself and am so far doing ok with it: trying to get to 140# by Christmas.  It isn't much but it is something I think I can safely shoot for and is helping me cope with all the goodies that are around.  So here goes:

HW: 268
SW: 230
Lowest: 130
LW: 142 (?)
CW: 141   

Yay!  Haven't been logging my food very well, but still trying to keep track of it in my head.  Been eating a lot more salads made with spinach leaves since the dr. wanted me to eat more iron-rich foods.  Have been adding some salad dressing,  another veggie (cuke or tomato) and a boca-style pattie.  Very satisfying! 

Also trying really hard to stick to the pact I made with Melissa not to bake cookies this month.  Am very seriously considering making some splenda sugar cookies...wanting to make the dough, roll it out, etc. is so tempting and such a part of the holiday!  The longer I wait to do it the better chance I have of staying 'out' of them and not derailing my Christmas weight goal.

What kinds of things are you doing to cope with temptations this month and how is it working for you?  Also, is anybody getting in their exercise?  I know you can't until your 4-yr old heals, Elaine, but what about everybody else?  For me it is still just the usual stuff at work and not at home.

Sounds yummy!  I could make it with the Sans Sucre vanilla cheesecake pudding...that is the closest thing I can use to Jell-o instant vanilla pudding (because of the aspartame issue).

Finally got over a really bad 2-day migraine today and got a sf pumpkin cheesecake baked for a party at work next week.   All I have to do to freeze it is set it out on the patio...we are having really nasty cold weather and getting really dumped with snow.  Am hoping my son's school district calls a closure tonight so I can stay home from work tomorrow.  So afraid of the drive but my boss drives even further than me so I feel really guilty about it. 

Haven'****ched any news, are you having bad weather too?  It is Christmasy and pretty but so treacherous to drive in...yikes!  And a first: they called up to cancel tomorrow night's support group meeting!  This will be the first one I've missed since before surgery.  Makes me sad, but it is too dangerous for people to drive there.

Aw, Elaine...what a horrible time you had.  Hope you are feeling better now.  What a sucky way to lose weight (I bet you did!).  Did your coworkers make it back or are you still stuck there by yourself?

I hope you feel better soon.  It really sucks getting sick.  I hadn't had an illness since before RNY other than an ear infection.  Wednesday my throat started itching and then by Friday I had a temperature and sounded like a frog too.  My tonsils were swollen and I could barely eat anything, just wanted to die.

I ended up having lots of respiratory stuff and finally today I feeling a bit better.  I had to work the weekend and it was the longest weekend ever. 


My husband got the GI version you got.. diarrhea bad and wanting to throw up  (but didnt) and couldn't keep anything in him.  He is still on a BRAT diet (bananas, rice, applesauce and toast) and I making him try shakes also for protein, he starting to feel better.

Seems this bug is biting everyone one way or another... ugh  Hang in there.. I keep saying better now than at Christmas right?  Never fun though.  Get well wishes and fairy dust your way!

1 cup fat-free half & half
One 1-ounce package sugar-free Jell-O instant vanilla pudding powder
5 cups 2% milk
½ cup Splenda granular
3/4 teaspoon freshly grated nutmeg
1/4 teaspoon cinnamon
2 teaspoons brandy or rum extract
1 teaspoon vanilla extract

Whisk together the half & half and pudding powder until smooth – this will be very thick. Slowly whisk in mil****il smooth. Whisk in Splenda, nutmeg, cinnamon, and extracts. Allow to chill for at least 2 hours. Serve with whipped cream and a sprinkling of freshly grated nutmeg. Makes 12 servings.

Per Serving: 82 Cal; 4 g Protein; 4 g Tot Fat; 7 g Carb; 0 g Fiber; 5 g Sugar; 155 mg Sodium

I plan to use hood calorie count down white milk or light vanilla soy and top with FF rhedi whip.  Will be my perfect after dinner drink when the family breaks out the blender and ice cream for brandy alexanders.
