Hi Elaine...here's the basic recipe.  Usually my recipes all get entered into my sparkpeople database but on this one I change it so much that I haven't yet.  But I'll post the link to the one I got the basic formula from (http://recipes.sparkpeople.com/recipe-detail.asp?recipe=7800 3)

Bran Muffins

3 cups Fiber One cereal (or All Bran)
2 cups ho****er
2 egg whites
1 1/4 cups splenda granular
3/4 cup whole wheat flour (pastry flour tastes nicest)
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
moisture add-ins...usually 1/4-1/2 cup depending on wetness
spices and extracts to taste

Basic instructions: add cereal and ho****er in a mixing bowl, stir to combine, set aside for about 20 minutes so that cereal will soften.  Whisk or mix with an electric mixer to further break down cereal after this time and add the rest of the ingredients, being careful not to overmix.  Divide into 12 muffins, bake at 375-400 degrees (depending on your add-ins) for 15-25 minutes.  Cool and freeze.

My favorite add ins:  a 2.5 oz. babyfood carroot puree, 1 T saigon cinnamon, 1 tsp vanilla, 1 tsp. hazelnut extract...this is the carrot cake version.

1/4 cup applesauce, 1 tab. cinnamon, 1/4 tsp. cloves....apple pie version

1/3 cup pumpkin puree, 1 tab. pp spice...pumpkin pie version

1/4 cup mashed bananas, 1 tsp. cinnamon, 1 tsp. hazelnut extract...banana nut bread version

1/4 cup shredded zucchini, 1 tsp. cinnamon.....zucchini bread version

Well...pretty easy to get the idea and you can add anything you want!  I've even added 2 scoops of protein powder before just to see how it would work and it was ok.

ANOTHER ABSOLUTELY TERRIBLE EATING DAY!

I wasn't going to even post this but I thought well it is what I ate good or bad.
I went to my niece's B-Day Party so a lot of the JUNK FOODS were eaten there (but still no excuse).

1 pot of coffee with sweetener and non dairy creamer
B:  2 slices of ham, 2 eggs, 1 s/f blueberry muffin
S:  1 package of p/b and crackers/ banana
AT PARTY:
1 slice of pepperoni pizza, few cheetos and Doritos, 3 or 4 small Tootsie rolls, 3 bites of kitty litter cake, 1 cup cake
AT HOME AROUND 9:00 p.m.
baked lays, 3 Ritz crackers w/ p/b, and s/f Popsicle

ACTIVITY:
played about 5 or 10 minutes of basketball at party

It was definitely a carb craving day and yes the more you eat the more you want that is for sure.
Every day I wake up I say, "OK this is a new day and I am going to do better but I screw it up before the day is out".

Feelin' like doing nnuttin...I mean nuttin....today...got some new chicken concoction in the slow cooker. We'll see how it turns out. (Bag of frozen chicken breasts, 2 cans cheddar soup, 1 1/2 cans, my nephew used 1/2 a can on his dip last night or it would be 2 cans, of mild rotel, a can of garbonzo beans, and in the end I think I will throw in  bag of frozen veggies with red, yellow peppers and broccoli.)  I am calling it Chicken sante fe. LOL

I love my slow cooker!

nyway.....

B-coffee w/cream
S-PB prt balls
L-1/2 chicken breast w/mustard
S-PB prot balls
D-chicken sante fe
S- yogurt w/frozen blueberries and granola

I so love the PB protein balls.  Takes care of my pb cravings I have had lately and cuts out the stupid crackers or rice cakes.  The do have oatmeal (rolled oats) but we all need fiber!  My 4 yo loves them too.

Still no weight gain, and going on week 10, I believe.  Breakfast.. 1 cup mac n' cheese.. was really craving it.  Lunch, going foraging now.. not really hungry yet.  Was thinking maybe a fish fillet (haven't had one in ages, and a little fish won't hurt).

Dinner, bbqing chicken and making jasmine rice and veggies.  Got SF FF banana pudding made for later tonight, when I get snacky.

Can I get the basic recipe from you?

I just can't figure out why the darn fiber supplements are soooo darn expensive!  good grief.  Then I can't decide if I want the tablets or the flavorless powder to add to my shakes in the am  I think I am more likely to take it if I have the tablets, but then I would need quite a few of those in a day, cause it only has so many grams per tablet.  See, here I go again, over-analyzing.  Got to remind myself...keep it simple!

Funny you mention the fat cells that shrink but never really go away....I have thought about this in the back of my mind.  I was a serious apple shape.  Still am but the girdle thing hides it well.  I have thought that if I at least got the TT, a lot of my fat cells (ya know, the ones that are so bad for us - the mid-section fat cells) would go with it and my heart health would be better (not that I currently have a problem, but they do say that people with larger waist-lines have higher heart disease risk).

I never was good at journalling my food.  Would try it and then drop it after a couple of days.  I was really resistaant to the pre-planning idea.  And, I hate logging into spark or fitday multiple times to log and keep track...turns into a serious OCD thing for me.

I have realized this last week....to....keep it simple.  Sometimes I tend to over-analyze it (be it food, planning, menues, carbs, protein, etc).  If I keep it simple it doesn't stress me. 

The small notebook is a breeze.  I only have to write it down once. A breeze.  I do leave myself a little leeway as far as calories cause I know I am human and will manage to squeeze somthing else in my day.  I think I have done so well this last week becasue I have kept it SIMPLE.

You have done fantastic Elaine! I am proud of you.  Only you can determine what is the best weight for you.  You made a couple points, one being the look of your face.  That is the first place we lose and gain weight from (Many of us) so its always shocking for me when I drop the weight i gained to see my face and its the first thing that freaks me out and makes me think i need to gain again.  Eventually the body evens itself out, it takes time.  Something I have learned.  As for the eating normally and wanting to continue that.. yeah.. you are right.  When you are a lower weight u cannot eat as much as it is harder to maintain, no doubt about that.  Very good thoughts there.. I like that you are thinking this through and plastics will no doubt help you lose a bit more too.  I want plastic surgery more for getting rid of those crazy fat cells that never die just waiting to plump up again.  That's my main reason for doing it.  Yes and to feel better of course and look better overall.

Ok here is my plan.  I work all night so I just woke up at 2pm, stayed up late last night so I could sleep in today to prepare for work.. oh night shift.. lol.

1) Protein shake with light vanilla soy milk and whippage
2) EAS cafe caramel shake on the way to work.
3) 4 oz baked chicken breast diced up with 1 cup brussel sprouts
4) EAS cafe caramel shake (b/c i never have time to eat two meals anymore)
5) 2 eggs and 3 oz sausage when I get home.

Going for high protein.  I haven't logged this yet but I am going to.  its under 1000 calories though I am sure. my scale is stil right at 150ish, not loving it.  I am having a halloween part next week so I have to stay out of the crap!  Also we are going to our first foster/adoption meeting on tuesday, an orientation meeting!
