I was just sitting here eating my breakfast and thought to myself, "hey why don't I post a post about breakfast." So here it is.

I always try to have a good solid breakfast cuz I have learned that if I dont' I am hungry all day long. So today for breakfast was breakfast tacos for the hubby and kiddo and for me it was scrambled egges with refired beans and cheese.  SO YUMMMMMMMYYYYY!!

How I made it>>>>>if anyone would like to try it.
I scrambled 1 egg and then added some refired beans to the eggs and warmed the beans with it. Then threw some cheese on top.

Live everyday like there is no tomorrow!!

I have a Click espresso protein drink every morning. Most of the time it is cold with ice, but today I mixed it with coffee and sf mint syrup. YUM!

Let's see, I got up early and made homemade pancakes and sausage for all my kids and husband.  Then when I was finished feeding everyone I sat down and had my favorite breakfast of cottage cheese and fresh strawberries.  Your Breakfast sounds great also, I just can't eat eggs yet.  Maybe one day!  Fun post thanks a bunch.

Rhonda,
You are so sweet.  Have you tried the mock muffins.  There are eggs in them but they have other things in them.

EGG MOCK MUFFINS
1 LB GROUND TURKEY ( I WILL ALSO USE HAM AND CHOP IT INTO SMALL CHUNKS)
1 ONION CHOPPED
FROZEN CHOPPED SPINACH (I USE ANY VEGGIES i MAY HAVE ON HAND ASPARAGUS ARE YUMMY TOO)
EGG BEATERS
CHEESE

BROWN TURKEY
COOK ONION AND CHOPPED SPINACH UNTIL THERE IS NO FURTHER LIQUID IN IT. (THIS WILL MAKE THE EGGS WATERY)
PUT MEAT AND VEGGGIE TOGETHER.
SPRAY STANDARD SIZED MUFFIN TINS WITH COOKING SPRAY.
PUT MEAT AND VEGGIE MIXTURE IN MUFFIN TIN TO TOP OF TIN.
POUR IN EGG BEATERS SO IT ALSO COMES TO THE TOP OF THE MEAT MIXTURE.  TOP EACH MUFFIN WITH CHEESE AND BAKE 350 DEGREES FOR 20-25 MINUTES.

I MAKE THESE AND EAT THEM ALL WEEK.  THEY ARE REALLY GOOD.  AND MICROWAVE NICELY.

Those sound great Liz.  I am going to have to make those.  Maybe the egg mixed with all the other stuff won't be so bad.  It is all worth a try,  Any idea on how much protein?

Thanks,

Rhonda

not sure but I know that i fill the entire tin with the meat mixture and then about 1/4 c egg beaters that is = to 1 egg then it is about 2tbsp of grated cheese. not really sure sorry.  To tell the truth it is a good deal of protein though.

Hi there!  It is nice to see your face again after a while

On the weekends, it is always the same.  A cup of water from Starbucks while Jeff gets some treat and a tall coffee.

For the kiddos (seems weird calling them that considering they both TOWER over me!), this a.m. it was french toast made with homemade bread, and some scrambled eggs.  OJ to drink.  Not really exciting though.

I had Kashi Go Lean (not the Go Lean Crunch) which has 13g of protein per 1/2 cup, with about 1/8 cup of pumpkin spice granola that I got from Sprouts and SunMilk. Yummy! I got in about 27 grams of protein just for breakfast... =)

I went to the Cheesecake Factory and had the Energy Breakfast. It's scrambled egg white, grilled chicken, tomatoes, spinach and mushrooms.

I love tomatoes, spinach and mushrooms but scrambled egg whites are disgusting, as it turns out. So I only brought home the rest of the chicken and veggies.
