Wow I am 38 years old and I witnessed an African American man being sworn into the White House.  As liberal as I am and conservative too I can HONESTLY say that I didn't think I'd ever live to see it that was UNTIL I heard that man speak.  He just stirs something in ME to make me think of OTHERS and that I CAN do anything!!

I thought of you guys often.  I didn't loose any weight which is par the course for MY body but again I believe in the hope that THIS month may be different.  I won't know  until the 31st =)

Today is the day that my friend Angela is having her VSG at UCLA.  Prayers and good wishes for her and her surgeon.

I am soooo happy for Angela. I hope everything goes smoothly. I am also excited about Obama..Wow I can't believe how lucky we are to have such a fine and outstanding man as our president.

Ok you caught me.. I am just being lazy! I am sooo mad at myself. I was soo good about exercise before the holidays came but then it came to a big STOP!! I gained 5lbs over the holidays and have taken off 3 of them, but I can't get past the gain. Exercise is something I need to step up. My goal weight is just around the corner and I hope I am not self sabotaging. I am so glad you post the WDYET it makes me accountable for what I eat and how much exercise I do or don't do.I don't know why I am not letting myself reach my goal?

I know therapy would be wonderful for me, but again I ran away from that, too. This is definetly a challenge that I NEED to overcome. But I want to Thank You for all your support. Please tell Angela I wish her a speedy recovery!!

TTC well yes and no, let me tell you the story first.  I came across and made a recipe called Mock Mac&Cheese.  It basically called for a pack of Tofu, some cream, some cheese, an egg, mix it up and bake it.  SOOOO lately I've been wanting a Tuna Noodle Casserole and sooo I used the same Mock Mac&Cheese principle.

So this is what it consists of

14oz Extra Firm Tofu
2 cans tuna (6oz)
Cream of Mushroom Soup
1 cup milk
1/2 cup egg beaters (or 2 eggs)
2 cups frozen peas
8oz cheddar cheese (2 cups shredded)

Drain tofu with use a fork to break it up, drain and add tuna, add remaining ingredients (reserving 1/4 cup cheese for the top).  Spread in pam sprayed 8x8 baking dish.  Top with remaining 1/4 cup cheese.  Baked 350 over for 30-40 minutes or until it is bubbly and lightly browned on the top.  Cut into 8 squares.

It actually tastes like Tuna Noodle Casserole (without the noodles of course)!!  Are you a Tofu girl?
