Park West Diner is on Route 40 and Salem Church Rd.
I like going there.  They never have a problem splitting a meal with my husband.  They will even put the one meal on two plates instead of just giving us an extra plate.
The hostess had RNY so they understand!

Mandarin Fruit Salad
2 sm. boxes sugar free jello
2 sm. boxes sugar free pudding (cheesecake or vanilla)
1 8 oz. tub light or sugar free cool whip
8 oz can of crushed pineapple
1 can of mandarin oranges
3 cups water

Pu****er, jello mix, and pudding mix in a pan and bring to a boil  while stirring. Let cool to room temperature. Drain canned mandarins and crushed pineapple. Stir into cooled mixture, and fold in cool whip. Refrigerate for an hour before serving. YUMMY!!

How's it going? I'm trying to get 3 lazy butts up off of the couch right now!
Going to go to the grocery store and get stuff to make a fruit salad, pasta salad, grilled chicken and any other good thing I see.

Have you been to Park West diner lately?

 Good Afternoon Kris.

I was up and out of the house relatively early today (9a.m) in order to beat the impending heat of the day. Went to SuperFresh to buy the ingredients for the side dish (Lemony Quinoa) which I'm bringing to my cousin's BBQ tomorrow. 

If it wasn't so incredibly hot out I would take my pup to the dog park.  But instead, we'll be staying indoors where it's nice and cool.

Good Morning Everyone...

Thought I would try to post a weekend roll call to see who was around and willing to chat.  With the holiday weekend upon us it has me up and started with a busy busy weekend.  Need to get a friend up off the sofa here in a few minutes and get her started for the day.  Then after brunch with a friend we are off to do some grocery shopping and maybe just some shopping in general.  After shopping this afternoon when it's home to get some cooking done for  a 4th of July get together we are all going to on Monday  and then hopefully some relaxing and maybe a movie late tonight. (if I survive that long).

So what happening with everyone today??

The weekend is going to be a busy one for us this year in the Lyall Household.  We have a friend staying with us so on Sunday we will be grilling at home.  Nothing fancy as we have a 4th of July party that we will all be going to on Monday.

As for Sunday tho -- we will probably be grilling some chops with some fresh veggies and maybe a small baked potato on the grill as well.

Monday -- Since we will be going to a friends house for a huge get together that's where I will be doing most of my cooking.  The menu that I will be taking as of right now is Garlic and Herb marinated chicken tender skewers, cannelini bean salad, quinoa-grapefruit-cucumber salad, and a Chinese cabbage salad (all wls friendly).  And then for dessert I will be taking Strawberry Cannolis and a fresh strawberry cheesecake

I love, love, love to cook, but because of recent surgeries I have not been able to do as much cooking as I would like to.  But assuming everything turns out well I will post the recipes for you later.

Marinate in your favorite oil and garlic spices ( I sprinkle a little locatelli cheese on it when almost done), put across the grids and turn after a few minutes. 8-10 minutes tops. 
I saute them in a skillet if not on the grill. The cheese gets a lil crispy and oh so good. ((HUGS)) Elissa

Grilled asparagus is awesome on the grill.  I don't think that there is anything that I haven't tried on the grill at least once in regards to veggies.  I just love the taste.  As for cooking I usually marinate them in a little garlic and olive oil, then throw them on the grill.  Keep a good eye on them for only a few minutes.  I usually just like them to a "crisp/tender" doneness.  but if you like them softer just keep them on the grill a bit longer.
