Creamy Taco Soup = YUM!

I wish I could remember who posted this recipe...... because I want to hug them!!

Haven't had much of an appetite today - needed to make dinner.....had a pound of ground meat in the fridge - Hummmmmm.  Then I remembered this recipe - so that is what I made for our supper.

YUMMINESS!!!  It's soooo good!  I've had three (small) bowls already - and surely will have more before time for bed!  LOL!

Here is the recipe - and the changes I made (out of necessity according to what I had on hand).  I think this is one of those recipes that you can fiddle with - and no matter what you do, it's gonna be delish!  :-)

Oh - I also added a can of Nibblet's Corn....juice and all.  I hadn't had any carbs today and have been craving corn!  LOL!  The corn added about 10 carbs per serving, max.

Creamy Taco Soup

Makes 8 cups or 6-8 servings

1 pound ground beef   (can use more, to taste)
2 3/4 ounces onion, chopped, 1/2 cup  ~ I used some onion powder as I didn't have an onion!  UGH!  I'll use an onion next time, though. 
2 cloves garlic, minced ~ since I didn't have an onion, I used 6 LG cloves of garlic 
1 tablespoon cumin
1 teaspoon chili powder
8 ounces cream cheese, softened
2 10-ounce cans Ro-tel tomatoes, undrained ~ I used 1 mild and one regular...made the doup sorta spicy, but not 'hot'
2 cans beef broth ~ I used 1 can low salt broth + 1 can water and 2 beef boullion cubes
1 can Nibblet Corn - juice and all (optional)  ***NOT included in nutritional info below***
1/2 cup heavy cream
2 teaspoons salt, or to taste ~
NO salt added!!  Didn't need it!

In a large soup pot, brown the ground beef then add onion and garlic. Saute until onion and garlic are soft.

Add the spices and cook on med/low a couple of minutes. 

Drop the cream cheese in bits into the meat. 

With the back of a big spoon, sma**** into the meat until no bits of white remain. 

Stir in remaining ingredients and gently heat through.  Do NOT boil!

Do not freeze.

361 Calories 

29g Fat 

18g Protein 

6g Carbohydrate (net)

Sounds sooo yummy, I'm gonna try this.  You know I bet this would be good without the ground meat during the "start up" phase of the DS.  What do you think?

It would be kinds like the enchilada soup at Chili's which I'm sure has tons of flour in it...this doesn't.

With a newly cut on tummy - I wouldn't.  

The acid from the tomatoes + the spicy from the chilis = OUCH!

This would be good with chicken thighs, cubed.  :-)  I may try that next time!

You are right.  I hope to hell I don't kill myself when I'm resleeved. 

I didn't have a "real" DS tummy before so I'm gonna have to relearn everything.  I think I'll just stick with protien nectors, regular protien drinks, SF popcycles and then later some creamed soup after the surgery.  I'll have to work my way up to Fage yogurt and cottage cheese. 

Can you believe I was eating Wendy's chili after a week?  Seriously, I should have known...but hey, we do what we gotta do...even if it's over again and again. lol

Thanks for keeping me on the straight and narrow.  Got my lung docs ok today and it was faxed to Houston.  That should be it...until I'm ready for the surgery.  Woo hoo!!
