Does anyone have a chicken salad recipe?

I'm looking for a chicken salad (easy) recipe.  Hopefully made with canned chicken.  I'm needing something different for work and I think this would be good with some saltines or even wheat crackers.  I was eating the lean cuisines but the meat ones are not that good.  I like the pizza's and pasta ones but I am not buying them because the carb count is extremely high.  If you have any other ideas for lunch that would be great too!!!!!

When I ate meat, I would make mine with canned chicken, mayo, celery, onion and salt & pepper. So simple and SO yummy. I do miss it!

I do mine very similar to this only I sub light mayo for reg mayo and I add either a little bit of chicken broth (first before the mayo..use the low sodium) or low sodium chicken bouillon.  You can get the powdered kind which makes great chicken broth when you don't have any and mixes with mayo really nice.  It kicks the chicken flavor up and the liquid broth cuts the amount of mayo you need.

I use a whole roast chicken, take off the skin and remove all the meat. I put the meat in the food processor, then add 1/4 cup light mayo, 2 stalks celery (cut up), 1/2 onion (cut up) and a small handful of sweet bread and butter pickles (sugar free). I then process the heck out of the mixture until it is smooth. It keeps for a week in the fridge and even hubby (who is not on a diet) loves it.

I'm certainly not as savvy in the kitchen as others, so I do use canned chicken with light mayo, fat free shredded chesse, salt/pepper, and a few black olives.  I have found the canned chicken to be softer and easier with the band - or is that just an excuse for being a lazy cook???

I boil my chicken breast but I don't see why you can't use the canned.  Cut them up in cubes and put it in my mini chopper.  While the chicken is cooking I cut the celery and onion up and use the mini chopper for them too.  Mix altogether with light Hellman's mayo.  I have not used salt since I have had my band.  I think the Hellman's is the secret.

My grandmother's "recipe"--chicken, light mayo, sweet pickle relish (you can get the dill relish and make it sweet by adding a packet of sweteener to it), celery, onion, apple, pecans or walnuts.  She put hers through a grinder (way before food processors).  Of course, the only way to eat it  was piled on fresh, gummy, white bread with Fritos!!!  I also like using cubed chicken with walnuts/pecans and grapes.

I use either canned or boiled chicken breast, a little onion, boiled eggs (added protein), very small peices of celery, a few crushed walnuts or pecans, miracle whip light and salt and pepper.  Throw is all in a food processor and away you go.  I do the same recipe but with tuna for a change.
