In the last month, I have cooked numerous WLS-friendly... yes, me... the spatula-challenged person that didn't cook AT ALL a month ago!! But frankly, I just got sick of the same old dry chicken and tasteless veggies and I'm too broke for restaurants.

I thought I'd post some photos...

------------------------------

Two days ago I made the Cabbage Rolls (and forgot to take photos - so sorry!!) Absolutely yuuuuuuuuuuumy!! It's from OH's Recipe Forum.

-----------------------------

As part of the 5 Day Pouch Test, I also made the
Low-Carb Pumpkin & Sausage Soup
Absolutely delicious... but I can't seem to find the photos!

Here's my
Spaghetti Squash Lasagna

A few day
ago I made Parmesan Tuna Patties
They were part of the 5 Day Pouch Test Mushie stage and were delicious!

--------------

Then I made the
Baked Tilapia. That was part of the 5DPT soft foods stage. (Sorry, by the time I remembered to take a photo, it was half eaten, lol)

I made the Low-Carb Stuffed Chicken for myself yesterday.

And last but not least....for my 6'1, 150lbs roomie, I made the Bacon Explosion (I think I gained weight just looking at it, lol.. so I don't recommend eating it). He absolutely LOVED IT... had a little loaf. I don't think I've seen him happier in YEARS.

(I had to cook it on the broiler pan in the oven because I don't have a smoker)

I never in my wildest dream thought I'd learn to cook so quickly... but slow and steady, it's been one of my keys to success so far!!

Other stuff I've made this month:

TORTILLA PIZZA

ALMOND MEAL MUFFINS (this picture was mid-baking, so they kind of sank... but they usually are fluffier)

MEAT-CRUSTED PIZZA

IMG_4396.jpg picture by yelena15

STUFFED PEPPERS

And a TOOOOOOOOON of No Pudge Brownies...

Wow girl!  You should open a restaurant!  I would definitely eat there.  I cant believe all the stuff you have made.  It all looks delish!!  I suppose now I have to get all the recipes and try them for myself.  I love to cook, but hate thinking of stuff to make for dinner.  My DH will eat just about anything so its not like I have to worry about fussy, I just get tired of making the same old thing.  But hey, now I have some new ideas.  Thanks so much.  You are just so adorable too, by the way!  I love reading your posts.  You keep me inspired.
Thanks!!!
Tammie

WAIT A MINUTE!!! Is that Canadian bacon and pineapple on that pizza??!!! That is my absolute FAVORITE pizza of all time..and my Husband thinks I'm gross for liking it. YUM! You are doing so well! It just takes some time and tinkering wth recipes and before you know it, you will be creating your own. They all look great! I always watch the food network and I saw one of the chefs making meatloaf, but she made them as stuffed peppers. I love that idea..because most stuffed peppers has rice, which I avoid. The meat roll turned out just like the picture...good for you Elena!

I wish I could see the pix! They're blocked. I'll check back later from home.

Anyways, those sound yummy!!! Congrats on discovering how to cook!!! I love cooking new recipes.

Do you have a crock pot? I love using mine. You just throw everything in there in the morning, then come home from work and it's done. You just have to throw together a side or two and there's your dinner!

I do have a crock pot but have only used it once. Will have to get to using that more often - thanks for the reminder!!

Yummers Elena! Rachel Ray has nothing on you, girl! I want to make the bacon explosion just because the bacon looks so pretty laid out like that.  You had some good recipes there. Congrats on trying something new.

Elena,

It is so great that you have started cooking. Everything looked great. I was curious, what did you stuff your peppers with? Oh, and my husband said he has to try the bacon explosion, but a healthier version. Funny huh? Well, have a great day!

I don't like sausage, but I am thinking this would the ultimate bacon burger for my husband with ground beef.  He would have to eat it all himself so I will have to decide if I want to give him a heart attack or not  I was going to make myself a tuna salad but now I am saving my tuna until I get some parmesan to make the patties.  These all look really good and simple.  Things like stuffed chicken would be such a good change.
