The peppers were stuffed with rice and such... I couldn't eat more than half of one... with the rice clumping up, but it was sooooooooo good. I got it off Weigh****chers. One pepper is 7pts. It's a full dinner for me...

Ingredients

 
  4 item(s) bell pepper(s)
  1 cup(s) uncooked white rice
  1/2 cup(s) minced onion
  2 tbsp unsalted butter
  3/4 cup(s) water
  8 oz shredded fat-free cheddar cheese
  2 tsp dried parsley

Instructions


Preparation:
Cut peppers lengthwise into halves and remove seeds and membranes. Place peppers in a large saucepan of boiling water; cook for about 5 minutes. Drain, reserve liquid. Cook rice according to package directions. In a skillet, cook onions in butter. Add water and cheese; stir until melted and blended. Stir in rice; season with salt and pepper to taste. Add parsley. Fill pepper halves. Put on a rack in skillet or large kettle with about 1 1/2 cups of cooking liquid in the bottom of the pan. Cover and simmer for about 15 minutes.
Recipe for stuffed red peppers serves 4.

Thanks Elena! 7 points, that's not bad for a meal. I haven't done WW since before surgery. I wonder how many points I would get now days. I used to get close to 30 I think. I'm down to 141 pounds. If you have a moment, I would love to know what my points range would be. If you don't have the info that OK, just curious. Keep up the good work!!! I love reading all you posts.

WOW everything looks so yummy. Can we have the recipe for the tortilla pizza, the muffins and the meat-crusted pizza.

I cannot believe that you made all of this. I remember a few months back, that you were saying that you knew nothing about cooking.

Muffins:

 

  • 2 1/2 cups nut flour
  • 1/2 cup honey
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 4 eggs
  • 2 mashed bananas
  • 1/4 cup melted butter (if necessary)

    Just throw it all into a food processor, mixer, or blender, and combine. If the batter is really thick add the melted butter a little bit at a time until the batter is muffin consistency.
    Line cupcake tins with paper cupcake liners. Spoon the batter into cupcake tins filling about 1/2 full (I use a 1/4 cup measuring cup so it goes faster).

    Bake at 375 degrees F (200 C) for about 15 minutes or until the muffins spring back when pressed. I bake them until they're pretty brown on top.

    Tortilla pizza.... get low-carb high-fiber whole wheat tortilla... put tomato paste on it, italian seasoning, basil, cheese and your chosen toppings and bake in oven at 350 for about 10 min. SUPER easy!

wow Elena I am going to have to get some tips from you because if it isn't from a box or a can I probably can't make it how did you learn so quick??? You never cease to amaze me!!! I am looking at your pictures drooling because i am on my 36 hour liquid diet for tomorrows procedure

UMMMM, Elena...I seem to have lost my directions to your house....LOL

Wow, that looks so good!  Today is the first day I am feeling actually hungry since surgery and seeing those photos have really made me ready to find some soup for lunch! LOL

I LOVE to cook and I have to say Im not too bad at it! LOL Not sure how Im going to handle the cooking now that Im living alone and dont have a family to feed anymore...but at least it is something I enjoy. I'll just start having dinner parties! LOL
