Sugar Free Low Carb Chocolate Meringue Cookies

I made these for my daughter..
She loves them, They are very light and airy..20 calories each, and low carb.



SF Chocolate Meringue Cookies

Ingredients

3 egg whites
1/8 teaspoon cream of tartar
1/2 teaspoon SF vanilla extract
2/3 cup Splenda
1 tablespoon Hersheys unsweetened cocoa powder
 

Directions


Preheat oven to 300 degrees
Chill a metal or glass bowl (that is absolutely free of any grease) in the freezer for 5-10 minutes.
Remove Bowl from freezer. 
Combine egg whites, cream of tartar, and sf vanilla.
Beat until the whites form soft peaks. Slowly add splenda; beat until stiff peaks form, and mixture becomes glossy.
Fold in cocoa powder.

Drop mixture by teaspoonfuls on to a cookie sheet that's been sprayed with a non stick spray, or line with parchment paper..
Bake for 25 to 30 minutes.
(Do not brown)
Allow to cool before removing.
Makes 36 cookies

These sound really good.  I didn't realize vanilla extract contained sugar - could you use DaVinci or Torani sugar-free vanilla syrup instead?

Most extracts don't. If you use Pure vanilla extract..not imitation...you should be fine..there's less than .5 grams of carbs in a teaspoon.

Jan I did Cream Cheese Pies this wk. and I always use almond extract instead of vanilla. I realized after I started making them that I was out of extract so I used the Davinci SF Almond. They turned out great!

I just read the ingredient list on my 100% Pure Vanilla Extract bottle: vanilla beans extractive in water, alcohol (35%) and corn syrup.  Who knew????  I've emailed the manufacturer to see if I can get an exact carb count.
