muffin tin meals?

Does anyone have any great recipes.  Recently in the OH magazine there were some wonderful recipes for different muffin tin meals to help with portion control.  Just wondering if anyone had any other ones to help add to my cook book.

 I'm not going to be helpful - but just wanted to say thanks for the idea - I had never heard of it.  If I find any recipes in my travels I will forward them to you.

HOw funny, that is the same website I just posted and it also has the recipe I just entered w/ pictures.  They look really good and I think my kids would love the kid friendly size too.  What doesn't take good out of a muffin pan!!  LOL.

 There are a lot of really great ideas and recipes for every stage - being pre-band stage this is an awesome find for me.  I'm glad I checked out your post.

These belong to OH Member Megan Mejia:

Mini- Frittatas

1 potatoe- chopped
1/2 onion, chopped
1 cup mixed peppers chopped (red, green and yellow)

5 eggs or 1/14 c. egg substitute
1/3 cup milk
salt/pepper
1 TBs oil

Cooking spray

Heat oven to 350, spray muffin tin w/ Pam

Heat oil and saute veggies.  While they cook
wisk eggs, milk and seasonings.  after Veggies are

cooked divide them evenly in 12 count muffin tin.
cover w/ egg mixture just to top of the veggies. cook  in oven

10-12 min and then broil for another minute of 2. be cafeful not
to burn anything.
loosen the edges and gently pry frittate loose.  Freeze individually in Ziplock bag

Makes 6 bandster sized portions.  115 calories per serving

Have you checked out Eggface's blog?  It includes a lot of recipes, many of which use muffin tins and all of which are great.

Thanks for the EGGFACE website.  Love it and I can't wait to make many happy little muffin tin meal and even mini muffin meals!  I love to cook and bake!

I've made baby meatloaves in muffin tins for years. They cook much faster and are so delicious! Just use your regular meatloaf recipe and 1/2 cup for each muffin.
