3. What are your Funnest plans for this weekend. Camping, walking with my sister.

Brocolli and Cauli Flower salad
1 lb bacon, fried and crumbled
broken up Brocolli 3 bunches and 1/2 head of Cauli flower, bite size
dressing: make and set overnight in food processor
1 1/2 c Mayo
1 small onion chopped very fine
3 T cider Vinagar
1/2 c sugar or 4 env. splenda
MIx all together, few hours before serving

Fat free Salsa dip
1 8oz tup of fat free sour cream
2 8 oz pkgs fat free cream cheese
1 16 oz jar salsa ( drained a little)
Place it all in a bowl and cook in the microwave on high until everything melts together. Stir every few minutes. I like this as a veggie dip or smeared on top of chicken or fish during the last few minutes of cooking.
I also sometimes add chopped onions, peppers or black olives.

3. What are your Funnest plans for this weekend. I have a coaktail dress-up housewarming party (all adults and no babies woohoo) Sat night, and we are taking the babes to the apple farm.

It would definitely be Lebanese stuffed bread.
1 pepperoni stick in food processor
1 pkg hot sausage no skin
1 pkg chopped spinach drained
1/2 cup parmesan cheese
slices of american cheese.
6 loaves white frozen bread dough
Cook sausage and pepperoni in sautee pan (together), add spinach and cook through. Pat to out get oil off. Put in mixing bowl and add parmesan cheese. Spread mixture evenly over rolled dough (this will be rolled up like a long log. Top with sliced american cheese. Fold sides and pinch together. Bake in over (on floured cookie sheet) at 350 for say 30 minutes. Just keep checking to see if the top is golden brown.
Serve in slices. They also freeze well. I make tons of loaves every Christmas. It is supposed to be 1 1/2 inch slizes. Mark cuts the loaf in half and eats it like a calzone. It is good!

Painting another bedroom on Saturday so my son can move into a bigger bedroom, hes not sleeping in a purple bedroom lol, then on Sunday we are going on a Victory Run on the motorcycle up to Rangley through the Height of the Land, that should be fun, I just hope it's not to cold.

Everyone asks for my Meatloaf, It's a recipe I got from a friend of mine 15 years ago and she has since passed away. I've used deer hamburg in the past in place of the ground beef, but I like it better with ground beef.
Ruby Jack Meatloaf
2 - 21/2 lbs Ground Beef or Ground Turkey
1 Sleeve of Toll House Crackers (Crushed)
2 Eggs
1 Sweet Onion (Chopped)
1/4 Cup Ketchup
1/8 Cup Yellow Mustard
1/4 Cup Milk
Mix ingredents together in large bowl and then bake in glass baking pan on 375 for 1 hour.
Finish the tongue and grove in my house, finish the tile on the master bathroom floor and chnage the faucet in the kitchen. I have more to do's but it only asked for 3 & those are the 3 that seem to be taking forever to get finished

Stuffed Green Peppers with Cheese
Ingredients
- 6 large green peppers
- 1 lb beef, Ground
- 1/2 cup onion, Chopped
- 1 (16 ounce) can tomatoes, diced
- 1/2 cup long grain rice
- 1/2 cup water
- 1 teaspoon salt
- 1 teaspoon Worcestershire sauce
- 1 cup cheddar cheese, Shredded (about 4 ounces)
Directions

Cut tops from green peppers; discard seeds and membranes. -

Chop enough of the tops to make 1/4 cup, set aside. -

Cook the whole green peppers, uncovered in boiling water for about 5 minutes; invert to drain well. -

Sprinkle insides of peppers lightly with salt. In a skillet cook ground beef, onion and 1/4 cup chopped pepper till meat is browned and vegetables are tender. -

Drain off excess fat. Add undrained tomatoes, uncooked rice, water, salt, Worcestershire, and a dash of pepper. -

Bring to boiling, reduce heat. Cover and simmer about 20 minutes or till rice is tender. -

Stir in cheese. Stuff peppers with meat mixture. Place in a 10x6x2 baking dish. -

Bake, covered in a 350 degree oven for 30 minutes.
