What CHu Eating today?
Well I was just going to do them like on brushetta without the crusty bread....so I was going to slice the tomato 1/4 in thick place on a sheet season with salt and pepper and some olive oil....375 for 8 to 10 minutes, until carmelized. I bought fresh mozz today (in a ball), so I was going to slice it and just put it on the tomatoes and put it back in the oven just until cheese is melted. I might add some italian seasoning as well on top of the cheese just to add more flavor.
There might be a proper way to do this but this sounds good to me!

B-4oz shake left over from last night (whole shake, 10 oz, included 1 small banana, 2 tbs peanut butter, 4-5 oz 1% milk, 2 ice cubes, 1/2 pkg nsa choc. breakfast mix)
L- 1 cup "Salad" (lettus, cheese, chicken, 4 slices peperoni,3 strawberries, dab dressing)
D- home made baked mac-n-cheese (we will see if i can tolerate this... kids will love it though), 1-2 oz garlic herb oven roasted bl/sl chicken breast, green beans and cucumber slice
S- banana, in-shelled peanuts
s- strawberries and 1 oz cheese cheese
