Ok, after the WSP coffee last Saturday, I would REALLY, REALLY love the recipe for Barb's cake. It was really good and I think my family would love it. I'd also like to make it for our church's around here....we have 3 churches in town that take turns holding a free community dinner each Thursday. Everything is donated for the dinner, and it's free to those who come...it's a main course w/usually a salad and desert. They offer both "normal" deserts and low sugar, but sometimes their low sugar offering is very limited. This would make a great addition for them I think.

If you're referring to Barb J.'s chocolate cake recipe, I think I have it at home - I'll see if I can't dig it up when I get home tonight if no one else posts it!

Hi Traci! I have it saved on my desktop at work so it's always handy. Linda and I ate a couple more rows until I pleaded with her to freeze some for later! Then I had another birthday cake at work on Tuesday.....so many cakes, so little pouchy! Here's the recipe...

Chocolate Cake

1 3/4 cup all purpose flour

1 3/4 cup splenda brown sugar

3/4 cup cocoa

1 1/2 teaspoon baking powder

1 1/2 teaspoon baking soda

1/4 teaspoon salt

1 1/4 cup lowfat buttermilk

1 teaspoon vanilla extract

2 eggs

4 tablespoons vegetable oil (you can use applesauce, but I don't)

1 cup boiling water

confectioners sugar

preheat oven to 350 degrees F

Combine dry ingredients in large bowl-slowly whisk in wet ingredients.

Pour into greased 9x12 inch baking pan and bake for 25 minutes

Allow to cool. Dust with confectioners sugar, if desired.

Serve.

Hi girlfriend! I'm doing just great!! I just celebrated my SUPER Golden Birthday

on Tuesday, which I might add is extra special because I figured if I didn't have the surgery, I'd be dead

by now!! But anyway, I'm all moved in and getting settled. YAY, I can finally have my life back!! I'm very tired of cardboard boxes! We still have some painting and organizing to do in the family room and craft room, but it's coming along!! I'm actually toying with the idea of coming up to MG coffee this weekend. Hope I remember where it is if I do!!!

Linda's out of town on business so I'm in charge of her dogs....well, they're in charge of me!!! So far, they are all alive, but just barely!!

She gets back on Friday and I'll be doing the happy dance then!!!

Either way, what would I have to do to tempt you to come to Maple Grove on Saturday??!!???

take 94 west -

then once you pass 169, take the exit for Co Rd 61 and go right.

At the first stoplight, Elm Creek Blvd, take a left.

At Main St (just past Olive Garden) take a Right.

Take your first left off Main St, and you'll see Byerly's in front of you - we'll be there!!!
