Any fellow pancake lovers?
I loved pancakes pre-op. I used to eat like 4 or 5 at a time, drowned in regular syrup, with loads of peanut butter on them. Well, this morning I made an Oatmeal Pancake. I found the recipe in my South Beach Diet cookbook.
Thought I'd share just in case there were any other pancake lovers out there. The recipe has 28 grams of protein, but the pancake was so big I couldn't eat it all. I topped it with sugar free syrup.
Enjoy!
1/2 cup old fashioned oatmeal
1/4 cup low fat cottage cheese (or tofu)
4 egg whites
1 tsp vanilla
1/4 tsp cinnamon
1/4 tsp nutmeg
Process ingredients in a blender until smooth. Cook in a nonstick skillet until golden on both sides. Top with sugar free syrup! Yummy!!!

These sound good, I will have to try them, my hubby LOVES weekend pancake bunches hehe!!
I made up a recipe a couple weekends ago trying for a healthier pancake I put in a scoop of chocolate truffle dessert protein, vanilla silk soy milk, cup or so of wheat flour, and a scoop of flax seed meal, topped with fruit and SF syrup, I was shocked hubby and MIL both loved em!!!
