Lazy Day Lasagna

I made this for dinner tonight. I got it from Aimee's Adventures' cookbook. It's all WW based recipes, but I just pick the ones that are low carb. Anyway, I had to share:

Lazy Day Lasagna

12 whole wheat lasagna noodles, uncooked
1 (12 oz) bag Morningstar veggie crumbles
4 cups Hunt's 4 cheese spaghetti sauce
1 1/2 cups water
1 (15 oz) container nonfat ricotta cheese (I used part skim)
1/2 cup egg sub.
9 slices Kraft 2% swiss cheese

Preheat the oven to 350. IN a large bowl, combine the crumbles, sauce, and water. In a small bowl, combine ricotta cheese and egg sub. Spray a 9x13 pan with nonstick cooking spray. Spread 1 cup of the sauce in the bottom of pan. Arrange 4 noodles over the sauce. Spread another cup of sauce, then 1/3 of the ricotta mixture. Add another cup of sauce, and repeat the whole process until you end with a layer of sauce. Cover and bake 70 minutes. Uncover and place cheese slices on top, then bake for another 15 minutes uncovered. Let stand 10 minutes before serving. Serves 9

Per serving: 190 calories; 5 grams fat (23.7% calories from fat); 22 grams protein; 15 carbs; 4 grams fiber; 18 mg cholesterol, 1099 mg sodium.

Now, I cut it to serve 15 instead of 9 because those pieces would have been huge! So refiguring the stats with 15 servings I came up with 114 calories, 3 grams fat, 13.2 grams protein; and 9 carbs.  The sodium is a bit high, but it sure was good.

Thanks for posting this recipe... I have made something like this in the past in the"fat" way.... seemed to be dryer than the old fashioned way of making it.... at least when I made it.... 

I could see lots of good possible variations to this recipe ..... the Dreamfields pasta would probably make it even more carb friendly? different cheeses?.....  Ground turkey breast instead of the Morningstar meat? although the Morningstar would be less work.... this recipe looks like it would be very fast and easy to make.... was it expensive?  What flavor is the Morning star meat?

Price-wise I don't think it was too bad. I purchased everything in the store brand, except the veggie crumbles. The crumbles were just an original flavor, maybed grilled. I am not sure. I couldn't tell you an exact cost because I bought all the ingredients when I did my major grocery shopping. I'm not sure about Dreamfields. There were only 9 carbs in one serving when I cut it into 15 pieces. That doesn't seem bad to me.

Let me know if you try any variations and they turn out well.
